Chill glass (if desired)

If the glass is warm, briefly rinse it with cold water or place it in the freezer for 5–10 minutes beforehand. Do not over-chill; a very frosty glass can cause excessive foaming.

Position the glass

Hold the glass at a 45-degree angle directly under the faucet of the draft tap, with the lip of the glass about 1–2 inches from the spout.

Open the tap and begin pour

Open the tap fully in a single smooth motion to avoid excess turbulence. Aim the beer down the side of the glass so it flows gently, reducing foam.

Adjust upright and finish pour

When the glass is about three-quarters full, gradually tilt the glass upright and allow a 1/2–1 inch head of foam to form at the top. Close the tap in a single smooth motion.

Garnish and serve

If using a garnish (such as a lemon wedge for certain wheat beers), place it on the rim or drop into the glass as appropriate. Serve immediately.

Notes on temperature and cleanliness

Serve draft beer cold (usually 38–45°F / 3–7°C depending on style). Always use a clean glass and ensure draft lines and taps are regularly cleaned to maintain flavor and minimize off-flavors and excessive foam.
