Method
Tamarind & Seed Marinade
Prepare tamarind extract
Warm 1/4 cup water in a small saucepan. Add tamarind pulp, simmer gently 2–3 minutes until it loosens. Strain through a sieve into a bowl, pressing to extract all pulp. You should have roughly 1/4 cup tamarind liquid; discard solids.
Toast and grind seeds
In a dry skillet over medium heat, toast sesame seeds, coriander seeds, cumin seeds, and nigella seeds for 1–2 minutes until fragrant and sesame begins to slightly color. Remove from heat, let cool 2 minutes, then grind coarsely in a spice grinder or mortar and pestle (you want a coarse paste-like texture, not a fine powder).
Shrimp Prep
Pat the shrimp dry with paper towels. Make 2 shallow diagonal slashes on each shrimp (optional) so marinade penetrates. Combine shrimp, minced garlic, and 1 tablespoon lemon juice in a bowl and toss. Add about 2 tablespoons of the tamarind & seed marinade to the shrimp, coating them well. Marinate 15–20 minutes in the refrigerator (do not over-marinate or shrimp will toughen). Reserve remaining marinade for serving or to brush after frying.
Gram-flour Coating & Batter
Whisk together besan, rice flour, cornstarch, baking powder, turmeric, red chili powder, black pepper, and 3/4 tsp salt in a medium bowl until uniform.
Add 1 tablespoon oil and slowly whisk in about 1/2 cup cold water to make a thick, smooth batter that will cling to shrimp. Batter should be slightly thicker than pancake batter — adjust with a tablespoon more water or flour to reach the right consistency.
Place additional 1/2 cup besan (reserve from total if you wish) or some dry gram flour on a plate for a light dusting. This helps the batter adhere better when you dip the shrimp.
Frying & Finishing
Heat oil in a deep skillet or heavy saucepan to 350°F (175°C). If you don't have a thermometer, test by dropping a small bit of batter — it should sizzle and rise to the surface slowly, browning in about 45–60 seconds.
Dust each marinated shrimp lightly in dry besan (about a thin coating), then dip into the batter to coat completely. Let excess batter drip off for 5–10 seconds.
Fry shrimp in batches (do not overcrowd) 2–3 minutes per batch until golden brown and crisp. Cook time depends on shrimp size; avoid overcooking — shrimp should be opaque and just firm. Use a slotted spoon to transfer to a wire rack or paper towel-lined plate to drain. Keep warm in a low oven (120°C/250°F) if making multiple batches.
Optional: Lightly brush or toss the hot fried shrimp with a little of the reserved tamarind & seed marinade for a glossy, tangy finish. Sprinkle chaat masala or roasted cumin powder and chopped cilantro over the shrimp while hot.
Serve immediately with lemon wedges and remaining tamarind-seed chutney on the side for dipping.
