Prepare ginger

Peel the fresh ginger and grate it finely (or use a microplane). Measure about 2 ounces (roughly 2 tbs packed grated). Reserve a few thin slices for garnish if desired.

Crush cardamom

Crack the green cardamom pods lightly with the flat side of a knife and remove the seeds. Lightly crush the seeds with a mortar and pestle or the back of a spoon to release aroma.

Cook milk base

Combine milks

In a wide, heavy-bottomed saucepan, combine 6 cups whole milk and 1 cup heavy cream. Stir to blend and place over medium heat.

Infuse ginger and cardamom

Add the grated ginger and the crushed cardamom seeds to the milk mixture. Add 1 tablespoon granulated sugar (this helps meld flavors) and a pinch (about 1 tsp) of kosher salt. Stir to combine.

Simmer and reduce

Bring the milk to a gentle simmer (small bubbles at the edges) over medium heat, stirring occasionally to prevent scorching. Reduce the heat to low and let the mixture simmer gently, uncovered, for 35–45 minutes, stirring every 5–7 minutes and scraping the bottom and sides with a wooden spoon. Cook until the liquid reduces by about one third and takes on a slightly thickened, creamy consistency.

Finish the base

Remove the pan from the heat. Stir in 1 cup sweetened condensed milk for sweetness and body. Taste; if you prefer slightly sweeter kulfi, add up to 2 more teaspoons sugar, stirring to dissolve. Let the mixture cool for 10 minutes.

Strain and chill

Strain

Place a fine-mesh sieve or cheesecloth over a bowl and strain the warm mixture to remove ginger fibers and cardamom husks/seeds. Press gently on solids to extract as much flavor as possible, but do not grind them through the sieve.

Cool thoroughly

Allow the strained kulfi base to come to room temperature (about 30 minutes) then cover and refrigerate until thoroughly chilled, at least 4 hours or overnight. Chilling improves texture and flavor melding.

Freeze in molds

Prepare molds

If using traditional kulfi molds or ice pop molds, lightly brush the inside with a few drops of neutral oil or spray with nonstick spray to help release. Arrange a few slivered pistachios and crushed almonds in the bottom of each mold for garnish if desired.

Fill and insert sticks

Pour the chilled kulfi base into the molds, leaving a small headspace for expansion. Insert lids or sticks as required by your mold.

Freeze solid

Place molds upright in the freezer and freeze until completely solid, at least 8 hours or overnight. For best texture, freeze 12 hours.

Unmold and serve

To release, dip the molds briefly (5–10 seconds) in a bowl of warm water, keeping the top/lid above water. Gently pull on the sticks or tap the mold to release the kulfi.

Garnish and present

Place the kulfi on a plate or serving dish and sprinkle with remaining slivered pistachios and crushed almonds. Garnish with a thin candied or fresh ginger slice on top for bite and visual contrast. Serve immediately.
