Aromatics
Add the crushed garlic, grated ginger and curry leaves. Sauté 30–45 seconds until garlic turns light golden. Add sliced onions and cook 5–7 minutes until softened and translucent.
Add tomatoes and ground spices
Stir in chopped tomatoes, turmeric, red chili powder, Kashmiri chili powder, and coriander powder. Cook 5–7 minutes, breaking down the tomatoes until the mixture becomes a thick, oil-separating masala.
For the Coconut-Tamarind Masala Paste
Toast and grind
In a small dry skillet over medium heat, toast the coriander seeds, cumin seeds and dry red chilies for 1–2 minutes until fragrant — do not burn. Combine toasted spices with the reserved fresh grated coconut, 1 tsp tamarind paste, warm water and 1/2 tsp salt in a blender or mortar and pestle. Grind to a smooth, slightly coarse paste (add extra tablespoon water if needed).
Add paste to pan
Add the coconut-tamarind paste to the onion-tomato masala and cook together over medium-low heat 3–4 minutes, stirring so the paste integrates and loses its raw smell.
Combine Vegetables and Simmer
Add the par-cooked potatoes, raw eggplant cubes, and string beans to the pan. Stir to coat with the masala. Pour in the remaining 1 cup water (for a medium-thick curry; add up to another 1/2 cup if you prefer looser gravy). Mix in slit green chiles and tamarind paste (2 tbs). Season with salt to taste.
Bring curry to a gentle simmer, cover partially, and cook 10–12 minutes until eggplant is tender and beans are cooked but still hold their shape. Stir occasionally to prevent sticking; if the curry thickens too much, add splashes of water.
Once vegetables are cooked through, stir in garam masala and gently mix. Taste and adjust salt, tamarind or chili as needed.
Finish & Serve
Turn off heat. Stir in fresh cilantro and lemon/lime juice. Drizzle 1 teaspoon oil on top and add a few fresh curry leaves if desired for aroma.
Serve Sodyachi Suki Bhaji hot with steamed rice, bhakri, or chapati. The curry keeps in the refrigerator for up to 3 days and often tastes better after a few hours as flavors meld.
