Prepare bread
Trim crusts from the bread slices if desired. Cut each slice diagonally into two triangles (you should have 16 triangles).
Brush with ghee
Lightly brush one side of each bread triangle with ghee. If you prefer a less rich version, use 1 tablespoon ghee and 2 tablespoons oil for frying.
Fry bread pieces
Heat a wide nonstick skillet over medium heat. Add remaining ghee (about 3 tbs) and/or oil to the pan. When hot but not smoking, add bread triangles in a single layer, ghee-brushed side down. Fry until golden and crisp, about 1–1½ minutes, then flip and fry the other side 30–45 seconds until lightly browned. Work in batches to avoid crowding. Drain on paper towels.
Optional quick syrup dip
If you like slightly sweeter soaked bread, make a quick syrup by dissolving 2 tablespoons sugar in 2 tablespoons water over low heat. Dip each fried bread triangle briefly (1–2 seconds) into the warm syrup, then place on a rack. Do not soak — bread should stay crisp outside while soft inside.

Toast saffron (if using)
Warm a small dry pan for a few seconds and briefly toast the saffron strands for 5–8 seconds to release aroma. Crush them lightly and set aside in 1 tablespoon warm milk to bloom.
Sweeten & flavor
When milk has thickened, add 2 tablespoons sugar, crushed cardamom pods, and the bloomed saffron with its milk. Stir and simmer another 5–7 minutes. Then stir in 100 ml sweetened condensed milk to enrich and sweeten the rab. Taste and adjust sugar if needed. Remove cardamom pods. Stir in 1 teaspoon rose water, if using, at the end and turn off heat.
Cool slightly
Allow rab to cool for 10–15 minutes so it thickens further. It should be pourable but coating the back of a spoon. If it becomes very thick when cooled, gently rewarm before assembling.
Assembly & garnish
Arrange bread
Place 2 fried bread triangles (or 3 small ones) on each serving plate or shallow bowl.
Pour rab
Ladle hot or warm rab generously over the fried bread so it soaks partially and becomes luscious but not completely soggy. Use about 100–125 ml rab per serving (adjust to preference).
Garnish
Sprinkle slivered pistachios and almonds over each plate. Scatter a few chopped rose petals and a small piece of edible silver varak if using. Serve warm or at room temperature.
Serving suggestion
Shahi Tukda is best enjoyed warm the day it is made. Leftovers can be stored refrigerated in an airtight container for up to 2 days; gently rewarm before serving and add a splash of warm milk if rab has thickened too much.
