Method
Samosas
Heat and crisp
If using frozen samosas, deep-fry or oven-bake according to package instructions until golden and crisp. For frying: heat vegetable oil in a deep pan to 350°F (175°C). Fry samosas in batches 3–4 minutes until golden, turning as needed. Drain on paper towels. If using baked/air-fried, heat until exterior is crisp (about 12–18 minutes at 200°C/400°F). Keep warm.
Chickpea Mix
In a medium bowl, combine drained chickpeas, ground cumin, red chili powder, salt, lemon juice and chopped cilantro. Gently toss to coat. If chickpeas are whole and you prefer a textured mix, lightly crush about 1/3 of them with the back of a spoon to create a mix of whole and smashed chickpeas. Taste and adjust salt or lemon.
Fresh Toppings
Combine finely chopped red onion, diced tomato and green chilies in a small bowl. Toss with a pinch of salt and a squeeze of lemon if desired. Keep refrigerated until assembly to maintain crunch.
Sauces & Chutneys
If using store-bought chutneys, stir well. To make quick mint-coriander chutney: blend 1 cup cilantro, 1/2 cup mint leaves, 1 small green chili, 1/2 tsp sugar, 1/2 tsp salt, and 1–2 tbs water until smooth. For tamarind-date chutney: mix tamarind concentrate or paste with 1–2 tbs date or jaggery and water to taste until pourable. Whisk yogurt until smooth; if it’s too thick, thin with 1–2 tbs water.
Assemble Samosa Chaat
On a large serving platter or individual plates, place the hot crisp samosas whole or halved (cut in half for easier serving). Spoon a generous layer of the chickpea mix over and around the samosas.
Drizzle 2–3 tbs of the mint-coriander chutney and 2–3 tbs of the tamarind-date chutney over the samosas and chickpeas. Add dollops of whisked yogurt (about 2–3 tbs) evenly across the plate.
Scatter the fresh onion-tomato mixture over the top, then sprinkle sev (or crushed papdi/crisps) for crunch.
Finish with a light dusting of roasted cumin powder, chaat masala, and a pinch of black salt if using. Garnish with chopped cilantro. Serve immediately so the samosas remain crisp.
