Soak and drain lentils

Rinse the moong dal, chana dal, and urad dal well under running water until the water runs clear. Place the rinsed lentils in a bowl and add 1 cup of water. Soak for 45 minutes to 1 hour until slightly swollen but not mushy. Drain thoroughly in a fine-mesh sieve and let sit for 10 minutes so excess water drains off.

Grind lentils

Transfer the drained lentils to a food processor or wet grinder. Pulse in short bursts — do not add water — to coarsely grind the mixture. Aim for a grainy, slightly coarse texture with distinct bits, not a smooth paste. Scrape down the sides frequently. The coarse texture gives the vadai their characteristic crunch.

Prepare mix-ins and combine

In a large mixing bowl combine the coarsely ground lentils with the finely chopped onion, chopped green chilies, grated ginger, chopped cilantro, sliced curry leaves, asafoetida, fennel seeds (if using), salt, red chili powder, and black pepper.

Add 1 teaspoon rice flour (optional) to help absorb any remaining moisture and to improve crispness. Mix everything thoroughly with your hand or a sturdy spoon until the mixture holds together when pressed. Taste a small pinch and adjust salt or chili if needed.

Shape vadai

Wet your palms lightly (to prevent sticking). Take a heaped tablespoon of the lentil mixture and flatten it into a 2–3 inch round disc about 1/4 to 1/2 inch thick. Alternatively, shape into small patties or slightly thicker discs depending on preference. Place shaped vadai on a tray and cover with a kitchen towel to prevent drying. Repeat until all mixture is used, about 16–18 vadai (tablespoon-sized).

Heat oil and fry

Pour oil into a heavy-bottomed frying pan or kadai to a depth of about 1 to 1.5 inches. Heat over medium-high heat to 170–180°C (340–350°F). To test, drop a small pinch of the batter into the oil — it should sizzle and rise slowly to the surface.

Carefully slide 3–4 vadai into the hot oil without overcrowding. Fry on medium heat so the interior cooks through while the exterior turns golden brown. Flip occasionally using a slotted spoon to ensure even browning. Each batch will take 3–5 minutes depending on size and oil temperature.

When vadai are evenly golden and crisp, remove with a slotted spoon and drain on paper towels or a wire rack. If oil temperature is too high, the exterior will brown too quickly; reduce heat slightly. Continue frying remaining vadai in batches.

Serve

Let vadai rest 2 minutes to crisp up, then serve hot or warm with coconut chutney, tomato‑onion chutney, or a tea. Leftovers can be refrigerated in an airtight container for up to 2 days and reheated in a 180°C (350°F) oven for 5–8 minutes to restore crispness.
