Main Chicken & Marinade
Marinate chicken
Trim excess skin/fat. Pat chicken pieces dry. In a bowl combine turmeric, 1 tsp salt, ginger paste and garlic paste. Rub this mixture thoroughly over chicken pieces. Marinate for at least 30 minutes (up to 2 hours) in refrigerator for best flavor.
White Gravy (Pandhara Rassa) Components
Prepare white paste
Soak poppy seeds and cashews in 2 tablespoons warm water for 10 minutes to soften. In a blender add grated fresh coconut, soaked poppy seeds and cashews with about 1/2 cup warm water. Grind to a very smooth, creamy paste. If your blender struggles, add the thin coconut milk (1 cup) gradually to help blend — you should end up with a smooth milky-white gravy base about 1 to 1 1/4 cups in volume. Set aside.
If using desiccated coconut
Reconstitute desiccated coconut in warm water for 30 minutes, then proceed to grind with poppy seeds and cashews until smooth.
Spice Base & Aromatics
Heat oil and ghee (if using) in a heavy-bottomed pot over medium heat. Add black peppercorns, cardamom, cinnamon and cloves. Sauté for 30–45 seconds until they become fragrant.
Add finely sliced onion and a pinch of salt. Cook on medium-low heat, stirring occasionally, until onions are soft, translucent and just beginning to brown at the edges (about 8–10 minutes). This gentle browning builds flavor but keep color light for a white gravy.
Add slit green chilies and curry leaves. Sauté 1–2 minutes until aromatic.
Cooking Chicken in White Gravy
Increase heat to medium-high, add marinated chicken pieces to the pot. Sear chicken for 3–4 minutes per side, just to lightly color the surface; you are not looking for deep browning. This seals juices and adds a little flavor.
Reduce heat to medium. Pour the prepared white coconut-poppy-cashew paste into the pot with the chicken. Stir gently to coat pieces. Add the thin coconut milk (if reserved separately) or up to 1/2 cup warm water to adjust consistency so the gravy just covers the chicken partially. Bring to a gentle simmer.
Cover the pot and simmer on low-medium heat for 20–25 minutes, stirring once or twice, until chicken is cooked through and tender (internal temperature 74°C / 165°F for thick parts). If the gravy reduces too quickly, add up to 1/4 cup warm water as needed; the final gravy should be silky and slightly thin rather than thick.
Seasoning & Finishing
Once chicken is cooked, lower heat. Stir in coriander powder, white pepper, garam masala, remaining 1/2 tsp salt (adjust to taste) and sugar. Mix gently so spices dissolve into the gravy.
Add the thicker coconut milk or cream (0.5 cup) and heat gently without boiling hard — bring the gravy back to a gentle warm state to avoid splitting. Simmer 3–4 minutes to incorporate creaminess and adjust thickness with little water if needed.
Serve & Garnish
Transfer Pandhara Rassa to a serving bowl. If desired, quickly temper or crisp a teaspoon of curry leaves and a slit green chili in a small spoon of hot oil and drizzle on top as garnish for aroma and a hint of color. Sprinkle extra chopped cilantro.
Serve hot with steamed rice, bhakri, or roti. Leftovers keep 1–2 days refrigerated; reheat gently on low to avoid splitting the coconut milk.
