Method
Lentils & Main Base
Rinse and Soak
Rinse all five lentils together under cold water until the water runs clear. Optional: soak the lentils in cold water for 20–30 minutes to reduce cooking time and aid digestion; drain before cooking.
Cook Lentils
Place the rinsed lentils in a large pot or pressure cooker. Add 5 cups water, 1 tsp turmeric and 1 tsp salt. If using a pressure cooker, cover and cook on medium-high until 3–4 whistles, then reduce heat and simmer 6–8 minutes more; allow pressure to release naturally. If using a pot, bring to a boil, skim foam, reduce heat to a simmer and cook 30–40 minutes until all lentils are soft and partially broken down, stirring occasionally and adding water if needed to reach a thick but pourable consistency (about 3–4 cups final liquid). Adjust salt after cooking.
Mash and Adjust Consistency
Once cooked, use the back of a spoon or an immersion blender to lightly mash some of the lentils to create a creamy texture while leaving some whole grains for body. Keep the dal warm on lowest heat while you prepare the tempering.
Tempering (Tadka)
Heat Fat
Heat 3 tbsp ghee or oil in a small frying pan or tadka pan over medium heat until shimmering (ghee will become fragrant).
Add Whole Spices
Add 1 tsp cumin seeds and 0.5 tsp mustard seeds. When they begin to sputter and pop (10–20 seconds), add 2 dried red chilies and 6 sliced garlic cloves.
Add Hing and Fresh Chilies
Stir in 0.25 tsp asafoetida and the slit green chili (if using). Fry for another 10–15 seconds to bloom the hing.
Optional Onions & Tomatoes
If using onions, add the chopped onion now and sauté 3–4 minutes until translucent. Add chopped tomato and cook 2–3 minutes until softened. Season lightly with a pinch of salt. This step adds body and a slightly tangy-sweet base but is optional for a cleaner dal.
Finish Tempering
Turn off heat. Pour the hot tempering carefully over the warm cooked lentils; it should sizzle on contact. Stir gently to incorporate all flavors.
Finish & Serve
Final Seasoning
Stir in 1 tbsp lemon juice (adjust to taste), 0.25 tsp garam masala if using, and the chopped fresh coriander (about 1/2 cup). Taste and adjust salt, acidity or consistency—add a splash of hot water if it's too thick and simmer 2–3 minutes to marry flavors.
Rest
Let the dal rest for 5 minutes off heat so the flavors meld. Reheat briefly before serving if needed.
Serve
Serve the Panchratan Daal hot with steamed rice, jeera rice, roti or naan. Garnish with extra coriander leaves and a drizzle of ghee if desired.
