Prepare and simmer crab

Clean crabs: remove gills, rinse well, halve or crack claws so flavors penetrate. In a large pot, place the cleaned crab pieces and 1.5 liters water. Bring to a boil over high heat, then reduce to medium and simmer gently for 20 minutes to extract flavor. Skim foam occasionally.

After 20 minutes, carefully remove the crab pieces with tongs. Reserve crab meat from claws and bodies for later (pick through shells). Strain the stock through a fine sieve into a clean pot, discarding shells and solids. Return the strained stock to the stove. Stir in 1 tablespoon tamari or light soy sauce (optional) for extra coastal umami.

Tamarind and rasam flavouring

Prepare tamarind: dilute 3 tablespoons tamarind paste in 1/2 cup warm water, stir and mash to combine, then strain into a bowl to remove fibers. Add the tamarind water to the crab stock on low heat.

Season the stock by stirring in 2 teaspoons rasam powder, 1/2 teaspoon turmeric powder, 1 teaspoon jaggery (or brown sugar), and 1.5 teaspoons sea salt. Taste and adjust salt or tamarind (more tamarind for tang). Bring the stock to a gentle simmer and keep warm.

Spice paste (ground)

Dry roast for the spice paste: in a small skillet over medium heat, toast 2 tsp coriander seeds, 1 tsp black peppercorns, 1 tsp cumin seeds, 1 tsp roasted toor dal, and 2 dried red chilies for 1–2 minutes until fragrant, shaking pan to avoid burning. Let cool slightly, then grind to a coarse-fine powder using a spice grinder or mortar and pestle. Add this ground mix to the simmering tamarind-crab stock and stir to distribute.

Aromatic tempering and vegetables

Prepare tempering: Heat 3 tablespoons sesame or coconut oil in a small frying pan over medium heat. When warm, add 1 tsp mustard seeds and 1/4 tsp fenugreek seeds. When mustard seeds begin to pop, add 15 curry leaves, 6 smashed garlic cloves, 4 thinly sliced shallots, and 2 slit green chilies. Sauté for 2–3 minutes until shallots soften and garlic is lightly golden.

Add 1 cup chopped ripe tomato to the tempering pan and cook for another 3 minutes until tomatoes break down slightly. Pour this aromatic tempering (with all oil and softened vegetables) into the simmering tamarind-crab stock. Stir to incorporate.

Allow the rasam to simmer gently for 6–8 minutes so the tempering flavors infuse. Adjust heat so the soup does not boil vigorously.

Finishing and assembly

Return reserved crab meat to the pot and warm through for 2–3 minutes. Do not overcook to keep the crab tender.

Turn off the heat. Stir in 2 tablespoons fresh lime or lemon juice and 1/2 cup chopped coriander leaves. Taste and adjust seasoning: add a pinch more salt, jaggery, or lime as needed. If you like extra heat, add crushed black pepper to taste.

Garnish with thinly sliced green onion if using and an extra few curry leaves. Serve hot in bowls with steamed rice or as a soup starter.
