Prep
Rinse the basmati rice under cold running water until the water runs clear to remove excess starch. Soak the rinsed rice in enough water to cover for 20 minutes; drain well before cooking.
Peel the lauki and grate or finely chop it. If it is very watery, lightly squeeze out excess moisture into a bowl but do not remove all liquid — some moisture helps cook the rice and keeps the dish moist.
Tempering & sauté
Heat ghee or oil in a heavy-bottomed pan or Dutch oven over medium heat until shimmering.
Add slit green chili, grated ginger, and minced garlic. Sauté for 30–45 seconds until fragrant.
Add sliced onion and sauté on medium heat until translucent and beginning to brown at edges, about 4–5 minutes.
Stir in turmeric, red chili powder (if using), garam masala (if using), and freshly ground black pepper. Cook spices for 20–30 seconds to bloom their flavor.
Add the grated lauki and 1/4 tsp salt. Cook, stirring occasionally, for 4–6 minutes until the lauki softens and releases some moisture. If the lauki releases a lot of water, continue cooking until most excess evaporates but keep enough moisture to steam the rice (about 1–2 minutes more).
Cook rice with lauki
Add 2 3/4 cups water and 1 tsp salt (adjust if you used salt earlier — total should be 1 tsp). Stir once to combine. Increase heat to high and bring to a gentle boil.
Once boiling, reduce heat to low, cover tightly with a lid, and simmer for 12–15 minutes until rice is tender and water is absorbed. Avoid lifting the lid while cooking.
After 12–15 minutes, turn off the heat and let the rice rest, covered, for 8–10 minutes to steam gently.
Finish & serve
Remove the lid and gently fluff the rice with a fork to separate the grains and evenly distribute the lauki.
Stir in chopped coriander, lemon juice, and fried nuts (if using). Adjust seasoning to taste and add more salt or pepper if needed.
Serve hot with yogurt raita, pickle, or a simple dal on the side.
