Prepare and marinate lamb
Trim excess fat from the lamb pieces and pat dry. In a large bowl combine yogurt, ginger paste, garlic paste, red chili powder, ground coriander, ground cumin, turmeric, garam masala, salt, lemon juice and 2 tablespoons mustard oil. Mix well into a smooth marinade. Add the lamb pieces and coat thoroughly. Cover and refrigerate at least 4 hours, preferably overnight (6–12 hours) for best flavor penetration.
Bring to room temperature
Remove marinated lamb from refrigerator 30–45 minutes before cooking to take the chill off so it cooks evenly.

Caramelize onions
In a heavy-bottomed wide pot or Dutch oven, heat 2 tablespoons vegetable oil and 1 tablespoon butter over medium heat. Add the finely sliced onions and a pinch of salt. Cook, stirring occasionally, until deep golden brown and caramelized, about 20–25 minutes. Reduce heat if onions start to burn; patience yields a sweet base.
Build the sauce
Add 1 tablespoon chopped garlic and the slit green chilies to the caramelized onions; sauté 1–2 minutes until aromatic. Add the chopped/blended tomatoes and cook on medium heat until the tomato loses rawness and oil begins to separate from the masala, about 8–12 minutes. If the mixture thickens too much, add 2–3 tablespoons of water to prevent sticking.
Finish sauce and season
Stir in crushed kasuri methi and adjust salt. Lower heat and simmer the sauce for 2–3 minutes so flavors meld. Keep the sauce warm and set aside while you brown the lamb.
Cook Lamb
Brown the marinated lamb
In a separate heavy skillet or the same pot (after removing the sauce to a bowl), heat 1 tablespoon vegetable oil over medium-high heat until shimmering. Add half the lamb pieces in a single layer (don't overcrowd) and sear for 3–4 minutes per side until nicely browned. Transfer browned pieces to the pot with the prepared sauce. Repeat with remaining lamb, adding a touch more oil if needed.
Slow-cook on low flame
After all lamb is in the sauce, add 250 ml water or lamb stock to achieve a slightly saucy consistency. Bring to a simmer, then reduce heat to low, cover tightly and cook gently for 1 to 1.25 hours, stirring every 15–20 minutes, until lamb is fork-tender and sauce has concentrated. If using a heavy oven-safe pot, you may also finish in a 160°C (320°F) oven for the same duration for even heat distribution.
Adjust seasoning
Taste and adjust for salt, a squeeze of lemon if desired, and a pinch of garam masala if you want extra aroma. If sauce is too thin, simmer uncovered 5–10 minutes to reduce; if too thick, add a splash of water/stock.

Smoke the dish
Carefully heat the small charcoal piece directly on a gas flame until it is red hot (using tongs) or heat in a small metal bowl on another burner. Place a heatproof small bowl in the center of the cooked lamb in the pot. Using tongs, place the hot charcoal into the small bowl. Spoon 1 teaspoon ghee or butter onto the charcoal—this will start to smoke. Immediately cover the pot tightly with its lid to trap the smoke and let it infuse for 5–8 minutes. Open lid and remove charcoal bowl with tongs. Stir gently to distribute the smoky aroma.
Garnish and serve
Scatter fresh cilantro and the ginger julienne over the lamb. Serve hot with naan, steamed rice or pulao and lemon wedges on the side.
