Prepare and marinate fish
Clean and score
Rinse the cleaned Koli fish under cold water and pat dry with paper towels. Make 2–3 shallow diagonal slashes on each side of the fish so the marinade can penetrate.
In a bowl mix turmeric, salt, and lime juice. Rub this mixture all over the fish, including inside the cavity and into the slashes. Set aside to marinate for 15–20 minutes while you prepare the masala.
Make the coconut masala paste
In a blender or wet grinder, combine the toasted spices, grated coconut, tamarind paste, warm water and salt. Grind to a smooth, slightly coarse paste (add up to 1–2 tbsp more water if needed). Taste and adjust salt/tamarind — the paste should be tangy, slightly spicy, and coconut‑rich. Set aside.
Cook the curry
Add curry leaves, sliced onion, crushed garlic and chopped ginger. Sauté until onions are soft and translucent and garlic is fragrant, 4–6 minutes. If using tomato, add it now and cook until it softens and oil starts to separate, about 4 minutes.
Stir in the prepared coconut masala paste into the pan. Fry the paste on medium heat for 3–5 minutes, stirring frequently so it cooks evenly and the raw coconut smell reduces. Add garam masala and red chili powder now and stir to combine.
Add about 1 cup water and bring the mixture to a gentle simmer. Taste the gravy and adjust salt and tamarind (add a pinch more salt or 1/2 tsp tamarind paste if needed).
Gently slide the marinated fish into the simmering gravy in a single layer. Spoon some gravy over the fish so they are partially submerged but not fully broken by stirring. Cover and simmer on low heat for 8–10 minutes, depending on fish size, until fish is cooked through and flakes easily. Do not stir vigorously — use gentle motions or tilt the pan to baste.
Uncover and simmer 1–2 minutes more to slightly thicken the gravy. Taste and adjust seasoning.
Finish and serve
Turn off the heat and sprinkle fresh chopped cilantro over the curry. Drizzle a teaspoon of coconut oil on top if desired for extra flavor.
Serve the Koli fish curry hot with steamed rice, neer dosa, ghee rice, or rotis. Leftovers keep in the refrigerator for 2 days; reheat gently to avoid breaking the fish.
