Prepare and marinate chicken

Rinse and pat-dry the chicken pieces. In a large bowl combine yogurt, lemon juice, ginger paste, garlic paste, turmeric, red chili powder and 1.5 tsp salt. Rub the marinade thoroughly into the chicken, making small incisions in thicker pieces to help flavor penetration. Cover and refrigerate for at least 1 hour, ideally 3–4 hours or overnight for best flavor.

Make spice paste (Kala masala base)

Dry-roast the whole spices and seeds: in a heavy pan over medium heat, toast coriander seeds, cumin seeds, black peppercorns, fennel, cloves, green cardamom and cinnamon stick for 2–3 minutes until aromatic. Remove and set aside.

Toast coconut and legumes: in the same pan add 2–3 tbs desiccated coconut (or thinly shredded fresh coconut) and roast until golden and lightly browned, about 2 minutes. Add the roasted peanuts or roasted chana dal and dry-roast briefly until aromatic. Remove from heat.

Soften onions and chilies: heat 1 tbs oil in the pan, add the dry whole red chilies and lightly fry 15–20 seconds to bring out color (do not burn). Add the roughly chopped onion and sauté on medium heat until soft and translucent, about 6–8 minutes. Let cool slightly.

Grind paste: combine the roasted whole spices, toasted coconut and peanuts/chana dal, sautéed onions, fresh grated coconut (if using) and tamarind paste in a blender. Add 3 tbs water and blend to a smooth, thick paste. Scrape down the sides and adjust with up to 1–2 tbs more water if needed so the paste is spreadable but not watery.

Heat oil: In a wide, heavy-bottomed skillet or kadai, heat 3 tbs mustard oil (or vegetable oil) until shimmering. If using mustard oil and it’s pungent, heat until it smokes briefly then reduce heat to medium and let scent mellow slightly.

Temper: Add black mustard seeds. When they begin to pop (10–20 seconds), add the curry leaves and sauté briefly until crisp (about 20–30 seconds).

Brown marinated chicken: Add the marinated chicken pieces in a single layer (do not crowd). Sear on medium-high heat until the surfaces are browned, 3–4 minutes per side. You may need to work in batches. Remove chicken and set aside.

Cook the spice paste: Reduce heat to medium-low. Add the prepared spice paste to the pan and cook, stirring frequently, for 3–5 minutes until the raw smell goes away and oil starts to separate slightly from the paste.

Combine and simmer: Return the browned chicken pieces to the pan, coating evenly with the paste. Add 1/3 to 1/2 cup (80–120 ml) hot water to create a thick sauce — use more for a saucier consistency. Add 1/2 tsp salt (adjust to taste). Cover and simmer on low heat for 20–25 minutes, turning the pieces once or twice, until chicken is cooked through and tender and the gravy has thickened.

Develop smoky/blackened character (Kala finish): For the characteristic smoky, slightly bitter 'kala' flavor, increase heat briefly and let the surface of the paste darken lightly without burning — 2–4 minutes, stirring constantly. Alternatively, for a pronounced smoke flavor, place a small piece of coal in a metal spoon, heat until red-hot, add a few drops of oil or ghee, place spoon in the pan, cover immediately and steep for 3–4 minutes (dhungar). Remove coal and discard.

Final seasoning and rest: Stir in crushed kasuri methi and chopped cilantro. Taste and adjust salt and chili. If the gravy is too bitter from over-darkening, add a teaspoon of jaggery or honey to balance. Turn off heat and let the curry rest, covered, for 5–10 minutes so flavors meld.

Garnish and serve

Garnish with toasted coconut pieces or thinly sliced fried onions (optional) and extra curry leaves. Serve hot with steamed rice, bhakri, or chapati and lemon wedges on the side.
