Method

Preparing Greens & Vegetables

Wash the spinach thoroughly to remove grit. Blanch the spinach leaves in boiling water for 1 minute, then immediately transfer to an ice bath to stop cooking and retain green color. Drain well and squeeze out as much water as possible. Chop finely.

If using fresh peas, blanch for 2 minutes and drain. If using frozen peas, thaw and pat dry. Lightly mash the peas with the back of a spoon or pulse once in a food processor—keep some texture.

Making the Kebab Mixture

In a small food processor, add cilantro, mint, green chilies, ginger, and garlic. Pulse to a coarse green paste. Scrape down the sides.

In a large bowl combine the chopped spinach, mashed peas, crumbled paneer, and boiled mashed potato. Add the green herb paste.

Add gram flour, bread crumbs (0.5 cup), roasted cumin powder, garam masala, chaat masala, red chili powder (if using), salt, and black pepper. Mix thoroughly with your hands or a spoon until well combined. The mixture should hold together when pressed; if too wet add 1–2 tbs extra bread crumbs or 1 tsp gram flour.

Taste a small pinch and adjust salt and spices. If the mixture is loose, refrigerate for 10–15 minutes to firm up.

Shaping & Coating

Divide the mixture into 10–12 equal portions for small patties (or 6–8 for larger kebabs). Lightly oil your hands and shape each portion into a round flat patty (approx. 2–3 cm thick). Press edges to make smooth.

Prepare Coating

Whisk the all-purpose flour with 2 tablespoons water to make a thin slurry (should coat the back of a spoon). Place additional bread crumbs (0.5 cup) on a plate.

Dip each patty first into the flour slurry, letting excess drip off, then coat evenly with the bread crumbs. Press crumbs lightly so they adhere. Place on a tray ready for frying.

Cooking

Heat a large nonstick or cast-iron skillet over medium heat. Add 2 tablespoons oil and swirl to coat. Test oil by dropping a few breadcrumbs—should sizzle gently.

Place kebabs in the skillet without overcrowding. Cook for 3–4 minutes on the first side until golden brown, then flip and add the remaining 2 tablespoons oil around the edges. Cook another 3–4 minutes until evenly crisp and cooked through. Adjust heat to prevent burning; lower heat if they brown too fast before heating through.

For a healthier option: bake kebabs on a parchment-lined tray at 200°C (400°F) for 12–15 minutes, flipping once halfway, until golden and crisp.

Finish & Serve

Transfer kebabs to a paper towel-lined plate to drain briefly. Garnish with lemon wedges and serve hot with mint chutney, tamarind chutney, and sliced onion.

Leftovers can be refrigerated in an airtight container for up to 2 days. Reheat in a skillet or oven to retain crispness.
