Prepare meat and aromatics

Trim any sinew from the guinea fowl breast. Finely mince the guinea fowl breast meat by hand or pulse briefly in a food processor (use short bursts) until a coarse, slightly pasty texture forms. If using, mix in the ground lamb to add fat and improve bind.

Grate the onion and squeeze out excess liquid using a fine sieve or clean kitchen towel — this prevents the mixture from becoming too wet. Add the grated onion, minced garlic, minced ginger, chopped green chilies, chopped cilantro, and chopped mint to the minced meat.

Add the egg white and 1 tablespoon of vegetable oil to help the mixture bind and remain moist while grilling.

Sprinkle in the kosher salt, black pepper, ground cumin, ground coriander, red chili powder, garam masala, and crushed kasuri methi (if using). Add the lemon juice. Mix thoroughly: using clean hands, knead the mixture for 2–4 minutes until it becomes sticky and cohesive. Proper mixing helps the proteins develop a tacky texture so the kebabs adhere to skewers.

Taste a small pinch by quickly pan-frying a teaspoon of the mixture and adjusting seasoning if needed (add a little more salt, chili, or lemon as preferred). If mixture feels too loose, chill it for 15–30 minutes to firm up; if too firm, add 1–2 teaspoons water or a bit more oil.

Divide the meat mixture into 8 equal portions (about 2 ounces / 55–60 g each). Shape each portion around a skewer into a long, even sausage/kebab shape, about 4–5 inches long and 1 inch thick. Press firmly so the meat adheres to the skewer with no air gaps.

If using a grill: preheat to medium-high (about 400°F / 200°C). If using a stovetop grill pan or broiler, preheat accordingly and oil the grates/pan. Lightly brush each kebab with oil to prevent sticking.

Grill the kebabs 3–4 minutes per side, turning carefully, until evenly browned with char marks and the internal temperature reaches 165°F (74°C) for poultry. Total cook time typically 10–12 minutes depending on thickness. If broiling, place kebabs on a foil-lined tray and broil 3–4 minutes per side, watching closely to avoid burning.

During the final minute, you can baste lightly with a mixture of 1 tsp oil and a squeeze of lemon for shine and flavor.

Rest and Serve

Remove kebabs from heat and let rest 3–4 minutes on a warm plate so juices redistribute. Slide kebabs off skewers if desired or serve on skewers.
