Prepare and infuse

Crush the cardamom pods lightly with the flat of a knife to open them. In a heavy-bottomed saucepan, combine whole milk and heavy cream. Add the grated fresh ginger and the crushed cardamom pods. Bring the mixture to a gentle simmer over medium heat, stirring occasionally to prevent scorching.

Reduce and concentrate

Once simmering, lower heat to medium-low and simmer gently, uncovered, for 20–25 minutes, stirring every few minutes and scraping the pan bottom to avoid burning. The volume should reduce by about 20–25% and the milk will thicken slightly and develop a lightly toasty aroma from the ginger and cardamom.

Strain and sweeten

Remove from heat. Strain the milk through a fine-mesh sieve into a clean saucepan or bowl to remove ginger fibers and cardamom shells, pressing gently on solids to extract flavor. Return the strained milk to the pan, stir in the granulated sugar until dissolved, then whisk in the sweetened condensed milk, 1 tablespoon honey, and the pinch of salt. Taste and adjust sweetness if desired — add up to 1 additional tablespoon honey if you prefer more pronounced honey flavor.

Cool before freezing

Allow the mixture to cool at room temperature for 20–30 minutes, stirring occasionally to release steam. For quicker cooling, place the pan in an ice bath and stir until lukewarm. Remove any residual cardamom bits if present.

Final Assembly & Freeze

Add nuts and portion

Stir 3 tablespoons of the chopped pistachios and 3 tablespoons of the slivered almonds (if using) into the cooled kulfi mixture to distribute mix-ins evenly. Pour the kulfi mixture into kulfi molds or small popsicle molds or a loaf pan (for slicing) leaving a little headspace for expansion.

Freeze

Cover molds with lids or wrap tightly with plastic wrap. Freeze until solid, at least 8 hours or overnight for best texture. If using a loaf pan, press a piece of parchment on the surface before wrapping to minimize ice crystals.

Unmold and serve

To unmold, immerse the molds in warm (not hot) water for 20–30 seconds, twisting gently to release. If using a loaf pan, run a thin-bladed knife around the edges and invert onto a cutting board, slice into portions. Place kulfi on serving plates, drizzle lightly with the remaining 1 tablespoon honey, and sprinkle the remaining chopped pistachios and almonds on top.

Storage

Store any leftover kulfi in an airtight container in the freezer for up to 2 weeks. For best texture, let frozen pieces sit at room temperature for 2–3 minutes before serving to soften slightly.
