Kebab Mixture
Prepare spices and aromatics
Lightly roast the green cardamom pods, cloves and black peppercorns in a dry pan over medium heat for 1–2 minutes until aromatic. Cool slightly, remove cardamom husks and grind the seeds with the roasted spices to a fine powder. Measure and set aside ground cinnamon and mace (or grated nutmeg).
Prepare onion and papaya
Grate the onion very finely, then place in a clean cloth and squeeze out excess water until nearly dry; reserve the squeezed liquid for another use. Separately, grate or finely chop raw papaya and blitz to a smooth paste; measure 2 tsp. The papaya contains enzymes that tenderize—do not overuse, or kebabs will become too soft.
Mix the mince
Put the lamb mince and raw marrow/fat in a large bowl. Add the roasted gram flour, ginger paste, garlic paste, finely chopped green chili, grated onion, papaya paste, chopped cilantro and mint, melted ghee (2 tbs), and lime juice. Add the freshly ground spice mix, ground cinnamon, ground cloves, mace (or nutmeg), white pepper and salt. Use your hands to mix thoroughly for 6–8 minutes until the mixture becomes very smooth and slightly sticky (this develops the protein and helps binding).
Rest and refrigerate
Cover the bowl and refrigerate for at least 1 hour (up to 3 hours) to allow flavors to meld and the papaya to tenderize the meat slightly. If the mixture seems too loose after chilling, add 1–2 tsp more roasted gram flour and mix briefly.
Shape kebabs
Divide the mixture into 8 equal portions for small melt-in-mouth kebabs (adjust portions for desired serving size). Wet your palms with a little water or ghee and shape each portion into a thin round patty or flattened oval about 7–8 cm (3 inches) across and 1–1.5 cm thick. Smooth surfaces so they hold shape on the grill or pan.
Cooking and Smoking
Grill or pan-fry
Preheat a heavy cast-iron skillet, griddle or non-stick pan over medium-high heat and brush lightly with ghee. When hot, reduce heat to medium and place kebabs in the pan leaving space between them. Cook for 2–3 minutes on the first side without pressing, until a golden crust forms. Turn gently and cook the other side for another 2–3 minutes. For an even more authentic Awadhi finish, you may finish kebabs in a 200°C (400°F) oven for 2–3 minutes to cook through without drying.
Dhungar (clove) smoking
To add a clove-smoked aroma associated with Galouti: place a small metal bowl or foil cup inside a larger shallow dish that can hold the kebab. Heat the charcoal piece directly on gas or over flame until it's glowing red and smoking. Using tongs, place the hot charcoal into the small bowl, drizzle the 1 tsp melted ghee over it and immediately cover the entire assembly tightly with a lid or foil to trap smoke for 3–6 minutes. For pronounced clove note: add 1–2 whole cloves or a small pinch of crushed cloves onto the hot coal before drizzling ghee. After 3–6 minutes, remove cover and discard coal. Do this smoking step briefly — 3–5 minutes usually imparts a beautiful aroma without making the meat overly smoky.
Finish and rest
Remove kebabs to a warm plate and brush lightly with a little melted ghee. Let rest for 2 minutes so juices settle.
Serve and Garnish
Arrange kebabs on a platter with thinly sliced onions (sprinkled with a little chaat masala if using), lemon wedges and chopped cilantro. Serve hot with room-temperature raita, soft room-temperature parathas or sheermal/roomali rotis, and green chutney. Recommend 2 kebabs per person as an appetizer or 3–4 per person as a main depending on appetite.
Storage: Refrigerate leftover kebabs in an airtight container for up to 2 days. Reheat gently in a low oven (150°C / 300°F) for 8–10 minutes, or re-smoke briefly on hot charcoal for aroma.
