Clean and cut
If not already cleaned, rinse 1 lb calamari tubes and tentacles under cold water. Pat dry with paper towels. Slice tubes into 1/2-inch (1–1.5 cm) rings; leave tentacles whole or halved if large.
Marinate
Place the sliced calamari in a bowl. Add 2 tbsp fresh lemon juice, 1 tsp minced fresh ginger, 2 cloves minced garlic, 1 tsp salt, and 1 tsp black pepper. Toss to coat evenly. Cover and refrigerate for 20–30 minutes. Do not marinate much longer than 30 minutes or the acid will begin to toughen the squid.
Batter & Coating
Prepare dry mix
In a shallow bowl or wide dish, whisk together 1 cup all-purpose flour, 1 tbsp cornstarch, 1 tbsp fine semolina or panko (if using), and 1 tsp baking powder. Reserve 1 tbsp extra flour in a small bowl for dusting squid pieces.
Make batter
In a small bowl, lightly beat 1 egg white until slightly frothy. Add 3 tbsp cold sparkling water (or ice water) to the egg white and gently combine. Pour the liquid into the dry mix and whisk just until a slightly thick, lumpy batter forms — it should coat the back of a spoon. Keep the batter cold until ready to fry.
Dust squid
Remove calamari from the refrigerator and pat any excess marinade off with paper towels (you want some seasoning but not excess moisture). Lightly toss the calamari rings and tentacles in the reserved tablespoon of flour to dry their surface — this helps the batter adhere.
Frying & Finish
Heat oil
Pour about 1 cup vegetable oil into a heavy-bottomed skillet or small Dutch oven (enough to give a 1–1.5 inch / 2.5–4 cm deep frying depth). Heat over medium-high until the oil reaches 350°F (175°C) or until a small drop of batter sizzles and turns golden in about 20–30 seconds.
Batter and fry
Working in small batches (do not overcrowd), dip a handful of dusted calamari into the cold batter, letting excess drip back into the bowl, then gently lower into the hot oil. Fry 1–1.5 minutes per batch, turning once, until the coating is crisp and pale golden. Tentacles may cook slightly faster — remove when golden and crisp.
Serve
Serve the crispy calamari hot with lemon wedges for squeezing. Offer dipping sauces on the side if desired (aioli, marinara, or sweet chili). Estimated to be best served within 10 minutes of frying for maximum crispness.
