Method
Prepare Potatoes & Crayfish
Cook potatoes
Place whole baby potatoes in a pot, cover with cold salted water, bring to a gentle boil and simmer 12–15 minutes until fork-tender. Drain, cool slightly, peel if desired and cut into 1–1.5 cm cubes. Set aside to cool to warm.
Cook or warm crayfish
If using raw crayfish: bring a pot of water to a boil with a pinch of salt; add crayfish and blanch 2–3 minutes until opaque. Drain and cool. If using pre-cooked crayfish tails, roughly chop or shred into bite-sized pieces and pat dry.
Make Dressings
Tamarind dressing
Whisk tamarind paste with 2 tablespoons warm water until smooth and pourable. Taste and adjust to a balanced sweet-tangy note — add a touch of honey or sugar if your tamarind is very tart (optional, not listed).
Combine green chutney dressing
In a small bowl mix green chutney, lime juice, olive oil, chat masala, salt, black pepper and red chili powder. Whisk until emulsified. Taste and adjust seasoning; the dressing should be herbal, zesty and slightly spicy.
Prepare Avocado & Vegetables
Halve the avocados, remove pits, scoop flesh into a bowl and roughly dice or mash to achieve a chunky texture. Toss immediately with 1 tablespoon lime juice (from the total listed) or a little of the green-chutney dressing to prevent browning.
In a large mixing bowl combine the cooled potato cubes, chopped crayfish, diced avocado, finely chopped red onion, diced tomato, chopped coriander and chopped green chilies. Gently fold ingredients to avoid breaking the avocado too much.
Assemble Chaat
Pour the green chutney dressing over the potato-crayfish-avocado mixture and fold gently until evenly coated. Drizzle the tamarind dressing in a thin stream (start with half) and fold again; add more tamarind for a more pronounced sweet-tangy note. Adjust seasoning with salt, pepper and an extra squeeze of lime if needed.
Taste and balance: you want a combination of savory (salt/chat masala), tangy (tamarind & lime), herbal (green chutney) and a hint of heat from chili. If too rich, add a splash of water to the tamarind to loosen; if too sour, a pinch of sugar will round it out.
Finish & Serve
Transfer the chaat to a serving bowl or plate. Sprinkle sev or crushed papdi over the top for crunch. Garnish with microgreens or extra chopped coriander and thinly sliced fresh red chili for a bright finish.
Serve immediately with lime wedges on the side. Chaat is best eaten fresh so the sev remains crisp.
