Chicken & Marinade
Prepare and marinate chicken
Trim excess skin/fat from the chicken pieces and make 2–3 shallow slashes on each piece so the marinade penetrates. In a large bowl, combine yogurt, turmeric, red chili powder, salt (use 1 tsp of the listed 1.5 tsp here and adjust later), ginger paste, garlic paste and lemon juice. Add chicken pieces and coat thoroughly. Cover and refrigerate for at least 30 minutes, preferably 2 hours. Bring to room temperature 20 minutes before cooking.
Dry-roast Masala
Dry-roast whole spices
Heat a heavy skillet over medium heat. Add coriander seeds, cumin seeds, fennel seeds, black peppercorns, dry red chilies, cinnamon stick, cardamom pods, cloves, star anise and mace. Dry-roast, stirring constantly, for 2–4 minutes until aromatic and the chilies darken slightly. Toss in the curry leaves for the last 20 seconds to crisp them. Remove from heat and cool completely on a plate.
Grind masala
Transfer the cooled roasted spices (remove cinnamon stick and cardamom husks if desired) to a spice grinder or small blender. Grind to a fine powder. For a slightly coarse texture, grind less. If needed, add 1–2 tsp of neutral oil to help form a paste. Set aside 2 tbsp of the ground masala for final garnish; reserve the remainder for the sauce.
Onion-Tomato Base & Tempering
Sauté aromatics
Add the sliced onions and a pinch of salt. Sauté on medium-low heat, stirring often, until the onions turn deep golden brown (about 12–15 minutes). This step builds the base flavor—if onions brown too quickly, lower the heat. Add sliced garlic, julienned ginger and slit green chilies. Cook for 2–3 minutes until raw aroma disappears.
Cook tomatoes
Add chopped tomatoes and tomato paste. Cook on medium heat, stirring occasionally, until the tomatoes break down and oil begins to separate from the mixture (about 8–10 minutes). If mixture starts sticking, lower heat and deglaze with a splash of water or stock.
Incorporate ground masala
Add the freshly ground Chettinad masala (reserve 2 tbsp for garnish). Stir to combine and toast the spice mixture for 1–2 minutes to release flavors. Taste and adjust salt now (use remaining salt).
Combine Chicken & Simmer
Brown marinated chicken
Increase heat to medium-high. Add the marinated chicken pieces in a single layer (do in batches if needed) and sear for 3–4 minutes per side until lightly browned. Stir gently to coat each piece with the masala-onion-tomato mixture.
Simmer
Pour in 1 cup of water or chicken stock, scraping up any browned bits. Bring to a gentle boil, then reduce heat to low, cover partially and simmer for 20–25 minutes (or until chicken is cooked through and tender). Stir once halfway, and if the gravy is too thin, simmer uncovered for the last 5–7 minutes to reduce. If too thick, add up to 1/2 cup more stock.
Finishing & Garnish
Final seasoning
Once chicken is tender, check seasoning and adjust salt and heat. Sprinkle the reserved 2 tbsp of dry-roasted masala and crushed kasuri methi. Stir gently, simmer 2 minutes to marry flavors. If using, add 1/2 tsp garam masala now for aroma.
Garnish and rest
Turn off heat, drizzle a little extra butter or a teaspoon of oil for sheen (optional). Garnish with chopped cilantro and fresh curry leaves. Let rest 5 minutes to allow flavors to settle.
Serve
Serve hot with steamed rice, ghee rice, dosa, appam or roti. Offer lime wedges to squeeze over individual servings.
