Prepare squash
Peel the butternut squash, cut off the ends, halve lengthwise, scoop out seeds, and cut the flesh into roughly 1-inch cubes so they cook evenly.
Add the chopped onions and sauté for 6–8 minutes, stirring occasionally, until they are translucent and starting to brown at the edges.
Add the chopped tomatoes and cook 4–5 minutes, stirring occasionally, until tomatoes soften and begin to break down.
Pour in 1 cup water or vegetable broth. Bring to a gentle simmer, cover, and cook for 12–15 minutes until the squash is fork-tender but not falling apart. Stir once or twice during cooking to prevent sticking.
Spices & Seasoning
While the squash is simmering, in a small bowl combine turmeric, coriander powder, red chili powder, garam masala, and salt so they are ready to add.
When the squash is nearly tender (after about 10 minutes), sprinkle the spice mix over the squash and gently stir to distribute evenly. If mixture looks too dry, add 2–3 tablespoons of water. Continue cooking uncovered for another 3–5 minutes, allowing flavors to meld and liquid to reduce slightly.
Taste and adjust salt and chili. If you prefer a creamier texture, mash a few cubes gently against the side of the pan with the back of a spoon to release some starch and thicken the sauce.
Tadka (Finish)
In a small tadka (tempering) pan or small skillet, heat 1 tablespoon butter or ghee over medium heat until shimmering.
Add 1/2 teaspoon mustard seeds and 1/2 teaspoon cumin seeds. When the mustard seeds begin to pop (about 20–30 seconds), add the broken dried red chili (or fresh red chili) and curry leaves. Fry for 10–15 seconds until the chili darkens slightly and the curry leaves crisp. Remove from heat immediately to avoid burning.
Carefully pour this hot tadka over the cooked butternut squash mixture. Cover the pan for 30 seconds so the aroma infuses the curry.
Stir in finely chopped cilantro and the optional teaspoon of lemon juice. Check final seasoning and adjust if needed.
Serve warm as a side with steamed rice, roti, or flatbreads.
