Marinate chicken

Trim excess fat. In a large bowl combine yogurt, turmeric, salt, and lemon juice. Pat chicken pieces dry, then toss into the marinade ensuring all pieces are coated. Marinate for at least 30 minutes at room temperature or up to 2 hours in the refrigerator.

Spice pastes & aromatics

Heat a wide heavy-bottomed skillet or kadhai over medium heat. Add the oil and butter. When hot, add cumin seeds and let them sizzle for 10–15 seconds until aromatic.

Add the green cardamom pods, cloves, bay leaves and the optional black cardamom. Fry for 20–30 seconds to bloom the whole spices, taking care not to burn them.

Add the sliced onions. Cook, stirring frequently, until they soften and start to caramelize, about 12–15 minutes. Reduce heat if onions are browning too quickly. Properly browned onions create the characteristic bhuna flavor.

Stir in the ginger and garlic pastes and the slit green chilies. Cook for 2–3 minutes until raw aroma disappears and the mixture is glossy.

Add the chopped/grated tomatoes and cook on medium heat, stirring often, until the tomatoes break down and oil begins to separate from the masala, about 8–10 minutes. Smash any large tomato pieces with the back of the spoon for an even paste.

Dry spices & cooking the chicken

Lower the heat and add ground coriander, ground cumin, Kashmiri chili powder, and salt. Stir and cook for 1–2 minutes to toast the spices and remove raw floury taste.

Add the marinated chicken pieces to the pan in a single layer if possible. Increase heat to medium-high and sear the chicken for 3–4 minutes without moving so it gets slight color. Then turn pieces and brown the other side for 3–4 minutes.

Once chicken is lightly browned, reduce heat to medium-low. Spoon some of the masala from the pan over the chicken, then cover the skillet partially (leave a small gap) to allow steam to escape. Cook for 12–18 minutes, stirring and turning the pieces every 4–5 minutes so they develop a thick, clingy coating of sauce (this is the bhuna stage). If the mixture sticks, add 1–2 tbs water; the goal is a thick, reduced gravy that clings to the chicken, not a soupy curry.

When chicken is cooked through (internal temperature ~75°C/165°F for dark meat or juices run clear) and the masala is reduced and glossy, sprinkle garam masala and amchur (or squeeze lemon juice) over the chicken. Stir and cook uncovered for 2 more minutes to let the flavors meld and excess moisture evaporate.

Finishing & garnish

Taste and adjust seasoning with salt, amchur or lemon, and chili if needed. Remove whole spices (if you prefer) or leave them for presentation.

Stir in chopped cilantro and optional mint. Turn off heat and let the bhuna rest for 3–5 minutes; flavors will settle and sauce will thicken slightly.

Transfer to a serving platter. Garnish with julienned ginger, fried onions, and lemon wedges. Serve hot with steamed basmati rice, naan, or paratha. Leftovers keep well refrigerated for 2–3 days and reheat gently on the stovetop, adding a splash of water if the sauce is too tight.
