Prepare okra

Wash okra thoroughly and pat dry with a kitchen towel. Trim the stem ends and slice into 1/2-inch pieces (or leave some whole if preferred). Ensure they are dry to reduce sliminess.

Chop onions & tomatoes

Peel and dice one large onion into chunky 1/2-inch pieces (about 1.5 cups). Finely slice the remaining onion thinly (about 1/2 cup) for the gravy base. Chop tomatoes into medium dice.

Mince aromatics

Mince or grate ginger and garlic together to make 1 tablespoon each. Slit green chilies and chop cilantro; keep lemon juice ready.

Cook Okra (to reduce slime)

Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the sliced/diced okra in a single layer if possible. Sprinkle with 1/4 tsp salt and sauté without stirring too frequently for 6–8 minutes until edges begin to brown and moisture reduces. Remove okra to a plate and set aside.

Make Gravy

In the same pan, add the remaining 2 tablespoons oil over medium heat. Add cumin seeds and let them sizzle for 10–15 seconds. Add a pinch of asafoetida.

Add the thinly sliced onions and a pinch of salt. Cook, stirring occasionally, until onions are softened and starting to brown, about 6–8 minutes.

Add the minced ginger-garlic and slit green chilies. Sauté for 1–2 minutes until raw aroma dissipates.

Stir in turmeric, red chili powder, coriander powder, and cumin powder. Cook the spices for 30–45 seconds to bloom their flavors.

Add the chopped tomatoes and 1/4 cup water. Mix, cover, and simmer on medium-low for 6–8 minutes until tomatoes break down and form a thick gravy. Use the back of a spoon to mash tomatoes slightly if needed.

Add the chunky diced onions (the 1–1.5 cups set aside earlier) to the tomato gravy, stirring to combine. Cook uncovered for 3–4 minutes so the onions retain some bite.

Combine & Finish

Return the sautéed okra to the pan. Stir gently to coat okra with the spiced onion-tomato gravy. Add remaining salt (adjust to taste), black pepper if using, and up to 1/4 cup additional water if you prefer a looser consistency.

Cover and simmer on low for 6–8 minutes so flavors meld and okra finishes cooking. Stir once or twice gently to avoid breaking the okra. If the pan becomes too dry, add small splashes of water.

Sprinkle garam masala and kasuri methi (crushed between palms) over the curry. Give a gentle stir and cook uncovered for 1 minute.

Turn off heat. Stir in lemon juice and chopped cilantro. Taste and adjust salt and spice level.

Serve

Transfer Bhindi Do Pyaza to a serving dish. Garnish with fried onions and additional cilantro if desired. Serve hot with roti, paratha, or steamed rice.
