Prepare vegetables and nuts
Wash and finely chop tomatoes, onions, green chilies, coriander, and raw mango or apple (if using). Peel and dice the boiled potato into small 1/4-inch pieces. Lightly crush the roasted peanuts/chana if whole. Keep all items ready in separate bowls.
If using papdi or puris, gently crush into bite-sized pieces but leave some whole for texture contrast.
Assemble chutneys & seasonings
Mix tamarind chutney and green chutney in a small bowl to taste. If store-bought chutney is thick, thin it with 1–2 teaspoons water so it will coat ingredients evenly. Taste and adjust sweet-sour balance.
In a separate small bowl combine red chili powder, chaat masala, roasted cumin powder, salt, black salt (if using), and lime juice. Stir briefly so the lime juice dissolves any clumps.
Mixing the bhel
In a large mixing bowl, add the puffed rice and the base sev (1.5 cups). Toss gently so they combine without crushing too much.
Add the diced boiled potato, chopped tomato, chopped onion, chopped coriander, green chilies, raw mango/apple (if using), and roasted peanuts/chana. Gently fold together so the puffed rice remains airy.
Drizzle the combined chutneys over the mixture in two stages: half first, toss gently to coat, then add the remaining chutney if needed. Add the seasoning-lime mixture a little at a time, tasting as you go to reach the desired tang and spice.
Sprinkle red chili powder, chaat masala, roasted cumin powder, and salt evenly over the mixture. Toss gently but thoroughly so all components are lightly coated. Avoid over-tossing to prevent sogginess.
Finish & serve
Taste and adjust salt, chutney, or lime if needed. Add extra sev (0.5 cup) and the crushed papdi/puris right before serving to maintain crunch.
Spoon the bhel into individual bowls or onto banana leaves/plates. Garnish with pomegranate arils, additional coriander, and a final sprinkle of chaat masala or sev.
Serve immediately. Bhel is best eaten immediately after assembling to enjoy the crisp textures; if left to sit, puffed rice will soften.
