Method
Prepare and slit eggplants
Trim and slit
Wash and pat dry 12 small baby eggplants. Trim the stem end leaving it attached. Make two perpendicular deep slits from stem almost to base so eggplant remains whole but opens like a cross. Do not cut through completely.
Sprinkle a little salt inside each eggplant and set aside while you prepare the stuffing so they soften slightly (5–10 minutes).
Make the bharla (stuffing) masala
In a small skillet over medium heat, dry-roast 3 tbs peanuts until golden and aromatic, about 3–4 minutes. Remove. In the same pan toast 2 tbs sesame seeds until they pop, 1–2 minutes. Remove. Toast 1.5 tsp coriander seeds and 1 tsp cumin seeds for 30–60 seconds until fragrant. If using dried red chilies, toast them briefly as well.
Allow roasted ingredients to cool slightly, then transfer to a small spice grinder or blender. Add 3 tbs grated coconut, 0.5 tsp garam masala, 1 tsp tamarind paste, 1 tsp jaggery (or brown sugar), and 1 tsp salt. Grind to a coarse-to-smooth paste, adding 1–2 tsp water only if needed to help blending. The mixture should be moist enough to hold but not runny.
Taste and adjust: add a little more salt, jaggery or tamarind if you prefer sweeter or tangier stuffing. Set the stuffing aside.
Stuff the eggplants
Using a teaspoon, fill each slit eggplant generously with the prepared bharla masala, pressing the stuffing into the slits so it stays inside. Use a little extra stuffing if needed. Reserve any leftover stuffing to add during cooking if necessary.
If desired, secure the stem area with a toothpick to prevent the eggplant from opening while cooking.
Cook the stuffed eggplants (main curry)
Add 1 finely chopped medium onion and sauté until translucent and beginning to brown at the edges, 5–7 minutes. Add 2 minced garlic cloves and 1 slit green chili; sauté 30–45 seconds more until aromatic.
Add 1 chopped medium tomato, 0.5 tsp turmeric powder and 0.5 tsp red chili powder. Cook until tomato breaks down and oil separates from the masala, 4–6 minutes. If mixture becomes too dry, add up to 1–2 tbs water.
Gently place the stuffed eggplants upright into the pan, arranging them snugly but not overcrowded. Spoon any reserved stuffing over the tops of eggplants.
Pour 1/2 cup water around the eggplants (not directly over the stuffing) so the base has some liquid. Cover the pan with a tight-fitting lid and cook on low-medium heat for 12–15 minutes, turning the eggplants carefully once halfway through so they cook evenly and stuffing permeates the flesh. If the pan becomes dry before eggplants are tender, add 1–2 tbs water at a time.
Remove the lid, increase heat slightly, and let any excess liquid reduce until the gravy is thick and clings to the eggplants, 3–5 minutes. Spoon the thickened masala over the eggplants as it reduces so they become well-coated.
Finish and serve
Taste and adjust seasoning — if you like more tang, stir in 1/2 tsp tamarind paste; for more sweetness add a little jaggery. Sprinkle 2 tbs chopped fresh cilantro on top.
Serve warm: Bharleli Vangi pairs well with steamed rice, rotis, or bhakri. Leftovers keep well refrigerated for 2–3 days and flavors deepen overnight.
