Roasted Aubergine
Preheat and prepare
Preheat the oven to 230°C (450°F). Line a baking tray with foil or parchment for easy cleanup.
Trim the aubergine stems and prick each aubergine a few times with a fork to allow steam to escape.
Brush each aubergine evenly with 1 tablespoon olive oil. Sprinkle smoked paprika, 1/2 teaspoon salt and half the black pepper over them and rub to coat.
Place aubergines on the prepared tray and roast for 30–40 minutes, turning once halfway, until the skins are charred/blistered and the flesh is very soft when pierced with a knife.
Remove from the oven and let cool slightly until you can handle them. Cut in half lengthwise and scoop the flesh into a sieve or bowl, leaving skins aside. Reserve about 2 cups of the mashed flesh for the bharta (measure after scooping). If you have excess liquid, drain for 10 minutes to avoid a watery bharta.
Smoky Spiced Baigan Bharta (Vegan Filling)
Heat 2 tablespoons vegetable oil in a large skillet over medium heat until shimmering.
Add 1 teaspoon cumin seeds and cook 20–30 seconds until they sizzle and become fragrant (do not burn).
Add the finely chopped onion and a pinch of salt. Sauté 6–8 minutes until translucent and beginning to brown at the edges.
Stir in the minced garlic, grated ginger and chopped green chilli. Cook 1–2 minutes until fragrant.
Add the chopped tomatoes and 1 tablespoon tomato paste. Cook 6–8 minutes, stirring occasionally, until the tomatoes break down and the mixture thickens.
Stir in ground coriander, ground cumin, turmeric, kashmiri red chili powder and remaining salt and pepper. Cook 1–2 minutes to bloom the spices.
Fold in the mashed roasted aubergine flesh and mix thoroughly with the spice-tomato mixture. Continue to cook on medium-low for 6–8 minutes, stirring often, to allow flavors to meld and excess moisture to evaporate. Taste and adjust salt or chili if needed.
Sprinkle garam masala over the bharta, stir, then remove from heat. Stir in chopped cilantro and 1 tablespoon lime juice to brighten the flavors.
If you want extra smokiness, you can add a small pinch (1/8 tsp) of liquid smoke now or briefly place the skillet over a low flame and smoke with a piece of hot charcoal covered by a small bowl (optional traditional technique).
Assembly & Garnish
Reheat oven to 200°C (390°F) if you prefer serving the aubergine shells warm. Brush the reserved aubergine skins with the remaining 1 tablespoon olive oil and a light sprinkle of smoked paprika and salt, then place skin-side up on a tray and warm 6–8 minutes.
Spoon the smoky spiced baigan bharta into the roasted aubergine shells or serve the bharta on a platter alongside toasted flatbread or steamed rice.
