Make the Dough

In a mixing bowl, combine 1 cup urad dal flour with 0.5 tsp salt, 1 tsp grated ginger, 0.5 tsp coarsely crushed black pepper, 0.125 tsp asafoetida and 1 tsp sesame seeds. Mix dry ingredients thoroughly so spices are evenly distributed.

Hydrate and Knead

Add about 1/4 cup of the water to the flour mixture and begin mixing with your fingers. Add additional water, a tablespoon at a time, until a stiff but pliable dough forms (total about 0.5 cup). Knead for 3–4 minutes to ensure a smooth dough without cracks. The dough should be firm enough to roll thin.

Portion and Roll

Divide the dough into 8 equal portions (about 1 tablespoon each). Roll each portion into a smooth ball. Lightly oil a clean work surface and a rolling pin. Take one ball, press it flat, and roll as thin as possible into a roughly 5–6 inch round (aim for near-translucent thickness similar to store-bought papad). Use a light dusting of flour or oil to prevent sticking.

Dry Slightly

Place the rolled discs on a lightly oiled tray or parchment and let rest at room temperature for 15–20 minutes — this helps them set so they won’t tear during frying. If you have a dehydrator or very low oven, you can dry for 30–45 minutes to remove surface moisture, but do not fully hard-dry.

Heat the Oil

Pour about 2 cups neutral oil into a wide, heavy frying pan or kadai, enough for shallow frying with some float. Heat over medium-high until oil reaches 350°F (175°C) or a small piece of dough sizzles and rises quickly with gentle bubbling.

Fry the Appalams

Carefully slide one rolled disc into the hot oil. It should puff immediately. Using a slotted spoon, press gently in the middle so the disc puffs into a bowl shape, and flip to cook evenly. Fry for about 20–30 seconds per side until lightly golden and crisp. Remove and drain on paper towels. Repeat with remaining discs in small batches so oil temperature stays steady.

Alternative Drying (Roasting)

If you prefer no oil, appalams can be crisped over an open flame or on a hot comal/griddle: hold a rolled disc with tongs over medium-high flame and rotate quickly until it puffs and black spots appear. Or place on a hot dry tava and press with a spatula until crisp on both sides. This takes practice to avoid burning.

Finishing and Serving

If you like, sprinkle 1/4 tsp chili powder over hot papads for a touch of heat or quickly temper 1 tbsp chopped curry leaves in 1 tsp oil and spoon over a few papads for aroma.

Serve immediately while crisp with lime wedges on the side. Store cooled appalams in an airtight container for up to 1 week (they will stay crisp).
