Prepare prawns

If prawns are raw, bring a medium pot of salted water to a boil. Add prawns and cook 1.5–2 minutes until just opaque and firm. Drain and immediately plunge into ice water to stop cooking. Pat dry and chop into large bite-size pieces if desired (leave whole or halved). If using pre-cooked prawns, rinse and pat dry.

Dice fruit and vegetables

Peel and dice the mango into roughly 1/2-inch cubes (about 1 cup). Halve, pit, and dice the avocado into similar-sized cubes; toss diced avocado lightly with a teaspoon of lime juice to slow browning. Thinly slice the red onion into half-moons and rinse briefly under cold water to soften sharpness, then drain. Finely chop the cilantro leaves and tender stems. If using jalapeño, remove seeds and finely mince.

Assemble base

Place mixed salad greens in a large serving bowl or platter. Scatter the mango, avocado, red onion, and chopped cilantro over the greens. Add the cooked prawns on top. Season lightly with 1 teaspoon sea salt and 1/2 teaspoon freshly ground black pepper, reserving most of the salt for the dressing so the salad is balanced.

Citrus Ceviche-Style Dressing

In a small bowl or mason jar, combine 60 ml fresh lime juice, 15 ml fresh lemon juice, 2 tablespoons extra-virgin olive oil, 1 teaspoon honey (or agave), 1/2 teaspoon fine sea salt, 1/4 teaspoon ground cumin, and 1 teaspoon grated lime zest. Whisk or shake vigorously until well emulsified. Taste and adjust seasoning: add more salt or a touch more honey if too sharp.

If you like a brighter, slightly 'ceviche' effect, add the chopped jalapeño and one tablespoon of the chopped cilantro into the dressing and let it macerate for 3–5 minutes before using.

Drizzle about 2/3 of the dressing evenly over the assembled salad and gently toss with two large spoons to combine without mashing the avocado. Reserve the remaining dressing for serving or to adjust seasoning at the table.

Finish and serve: taste and adjust with remaining salt/pepper or extra lime juice if needed. Garnish with extra cilantro leaves. Serve immediately so avocado remains fresh and prawns retain texture.
