Preparation & Chilling

Place the shallow bowl on a work surface and fill it halfway with crushed ice. Set the small serving ramekin or dish into the bowl so it sits on the ice; this keeps the caviar chilled while serving.

Open the Oscietra caviar just before serving. If it is in a tin, dry any condensation on the tin with a paper towel and place the tin into the chilled ramekin on the ice bed. Keep covered and refrigerated until plating.

Prepare Bases & Accompaniments

Blini

If using blini, warm them gently in a 300°F (150°C) oven for 3–5 minutes just until warm — do not dry them out. Keep covered with a clean towel to retain softness.

Toasted Brioche

If using brioche slices, lightly butter each slice and toast in a 350°F (175°C) oven or in a skillet over medium heat until golden and crisp at the edges, about 3–4 minutes. Cut into bite-size rounds if necessary.

If offering smoked salmon, arrange thin slices on a platter and keep chilled until plating. If using sieved hard-cooked egg yolks, place into a small bowl for spooning onto bases.

Prepare Garnish Mixtures

In a small bowl combine the crème fraîche with half of the chopped chives, a pinch (about 1/8 tsp) of flaky sea salt and a light grind of black pepper. Stir gently and taste; adjust seasoning very lightly. Transfer to a small chilled bowl for service.

Place the remaining chives, chopped red onion, capers (if using), and microgreens on a separate small platter for guests to assemble or for you to dress each bite.

Cut lemon into thin wedges and zest a small amount (about 1/4 tsp of zest) for finishing.

Plating & Serving Caviar

With the caviar tin resting on the ice bed and using the mother-of-pearl spoon, transfer small portions of Oscietra caviar to the center of the chilled serving dish just before bringing to table. Portioning recommendation: 0.5–1 ounce per person (this recipe assumes 2 oz total, serving 4).

Place bases (blini or brioche) on a chilled serving platter. Spoon a small dollop (about 1 tsp) of the crème fraîche mixture onto each base.

Option A (classic): Using the mother-of-pearl spoon, top each dollop of crème fraîche with about 1/2 tablespoon (approximately 5–8 g) of Oscietra caviar. Garnish with a few sieved hard-cooked egg yolk crumbs or a tiny sliver of smoked salmon and a single microgreen or chive tip. Finish with a very light sprinkle of lemon zest.

Option B (alternative): For guests who prefer, place a thin slice of smoked salmon atop the base, add the crème fraîche, then crown with caviar. Add a few chopped red onions or capers as desired.

Serve immediately with lemon wedges on the side. Advise guests to use the mother-of-pearl spoon to avoid metallic flavors from silverware. Keep remaining caviar chilled on ice and return to refrigeration promptly after service.

Finishing & Storage

If any caviar remains, cover the tin tightly, place on ice for transport to the fridge, then refrigerate at 28–32°F (-2 to 0°C) and consume within 48–72 hours for best quality. Do not freeze.
