Prepare strawberries

Rinse strawberries under cold water, pat dry with a kitchen towel, remove hulls and slice large berries in halves or quarters so pieces are bite-sized. Measure approximately 2 cups and transfer to a large mixing bowl.

Prepare pineapple

Trim top and base of the pineapple, remove skin and eyes with a knife, then cut flesh away from core and dice into roughly 1/2-inch pieces. Measure 1 cup and add to the mixing bowl.

Prepare grapes

Rinse grapes, dry, and remove any stems. If grapes are large, halve them. Add 1 cup to the mixing bowl.

Prepare kiwi

Peel kiwi with a paring knife or spoon, slice into rounds or half-moons about 1/4-inch thick. Use 2 kiwis and add to the bowl.

Prepare mango

Peel and dice the mango: score flesh into a grid on each cheek without cutting through the skin, then scoop out diced pieces with a spoon or cut away flesh from the seed and dice. Measure 1 cup and add to the bowl.

Add blueberries and orange

Rinse blueberries and orange segments; if using a whole orange, supremé it by cutting away peel and pith and removing segments between membranes. Add 1 cup blueberries and 1 cup orange/mandarin segments to the bowl.

Toss gently

Using two large spoons, gently fold all fruit together in the mixing bowl to combine without crushing softer pieces like berries or kiwi.

Chill

Cover bowl and chill in the refrigerator for 15–30 minutes to let flavors meld, if time allows. Alternatively serve immediately.

Light Citrus-Honey Dressing (optional)

Whisk together 2 tablespoons fresh lime juice, 1 tablespoon honey, 1 teaspoon orange zest and a pinch of fine sea salt in a small bowl until honey dissolves. Taste and adjust — add a little more honey if you prefer sweeter, or more lime for brightness.

Drizzle dressing over the fruit and gently toss once more to coat evenly. Use all or part of the dressing according to taste.

Garnish & Serve

Transfer the dressed or plain fruit to a serving platter or bowl. Sprinkle 2 tablespoons toasted coconut flakes and 1 teaspoon chia seeds over the top, and scatter the 2 tablespoons of fresh mint leaves for color and aroma.

Serve immediately or keep chilled up to 4 hours. For best texture, add delicate garnishes like coconut and chia just before serving so they remain crisp.
