Clean the octopus

If your octopus is whole and not cleaned, rinse under cold water. Remove the beak by cutting around the mouth at the center of the tentacles and pushing it out. Remove the eyes if desired and turn the head inside out to remove any internal organs, then rinse thoroughly. Pat dry with paper towels.

Simmer the octopus

In a large pot, bring 2 liters of water to a gentle simmer with 1 tablespoon coarse salt, 120 ml white wine (optional), 1 bay leaf and 6 peppercorns. Do not boil aggressively — a gentle simmer keeps the texture tender. Once simmering, reduce heat so the surface movement is gentle.

Tenderize by simmering

Submerge the whole octopus. Simmer gently, uncovered, for about 35–45 minutes for a 1–1.2 lb octopus, until the thickest part of a tentacle is easily pierced with a paring knife (not mushy). Check after 30 minutes to avoid overcooking. If uncertain, remove a small piece and test.

Cool and rest

Turn off the heat and let the octopus cool in the cooking liquid for 15–20 minutes to allow carryover cooking and reabsorption of moisture. Remove and transfer to a cutting board. Reserve some cooking liquid if you want to keep the octopus moist before frying.

Portion

Cut tentacles from the head and slice into 1–1.5 inch (2.5–4 cm) lengths, or leave whole small tentacles for visual appeal. Dry pieces thoroughly with paper towels — removing surface moisture is critical for a crispy coating.

Coating & Finish

Prepare coating mix

In a shallow bowl or rimmed plate, whisk together 1 cup all-purpose flour, 1/2 cup cornstarch, 1 teaspoon fine sea salt, 1/2 teaspoon black pepper, 1 teaspoon smoked paprika and 1/2 teaspoon garlic powder until evenly combined.

Coat the octopus

Working in a single layer, toss a few pieces of dried octopus in the flour-cornstarch mixture until fully coated. Shake off excess. Place coated pieces on a wire rack and repeat with remaining octopus. Let rest for 5 minutes so coating adheres.

Zest and garnish

Zest the lemon and combine zest with 2 tablespoons chopped parsley in a small bowl to sprinkle over the fried octopus just after frying.

For Frying

Heat the oil

Pour 750 ml neutral oil into a wide, heavy-bottomed pot or deep pan to a depth of about 2–3 inches (5–7.5 cm). Heat over medium-high until the oil reaches 175–180°C (350–355°F). Use a thermometer for accuracy. If you don't have a thermometer, oil should shimmer but not smoke; test with a small pinch of coating — it should sizzle immediately and float.

Fry in batches

Fry the coated octopus pieces in small batches to avoid crowding (3–6 pieces depending on pot size). Gently lower pieces into the oil and fry for 2.5–3.5 minutes, turning once, until golden brown and crisp. Smaller pieces may take less time. Use a slotted spoon or spider to transfer to a paper towel–lined tray to drain. Maintain oil temperature between 170–180°C (340–355°F); lower heat slightly if it drops.

Finish and season

While still hot, sprinkle the lemon-parsley mixture and a light pinch of extra sea salt over the octopus. Squeeze fresh lemon juice over the pieces just before serving for brightness.

Optional Dipping Sauce

Make the sauce

Whisk together 120 ml Greek yogurt, 2 tablespoons mayonnaise, 1 tablespoon lemon juice, 1/2 teaspoon minced garlic, 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper until smooth. Chill until ready to serve.
