Pimento Cheese Spread
Grate the sharp cheddar if not pre-grated; measure 2 cups and place in a mixing bowl.
Soften the cream cheese to room temperature (about 20–30 minutes) or microwave in 5–7 second bursts until spreadable.
In the bowl with the grated cheddar, add the softened cream cheese and mayonnaise.
Fold in the chopped roasted red pimentos and sliced green onion, distributing evenly.
Add Dijon mustard, smoked paprika, Worcestershire sauce, hot sauce (if using), lemon juice, kosher salt, and black pepper.
Mix thoroughly with a spatula or electric hand mixer on low speed until the mixture is uniform but still has texture from the grated cheese and pimentos (about 30–45 seconds). Taste and adjust seasoning for salt, heat or acidity.
Cover and refrigerate the pimento cheese for at least 15 minutes to let flavors meld, or up to 24 hours. Bring to cool room temperature before assembling if refrigerated longer.

Preheat & Prep
Preheat a skillet or griddle over medium-low heat. Have a spatula and a heavy pan (or sandwich press) ready. Butter one side of each bread slice evenly.
Assemble Toasties
Spread about 1/4 to 1/3 cup of the pimento cheese onto the unbuttered side of 4 bread slices (adjust to preference). If using extra grated cheddar, sprinkle a tablespoon or two on top of the spread for extra melt.
Top each with the remaining bread slice, buttered side out, pressing gently to compress the sandwich slightly.
Cook
Place sandwiches in the preheated skillet over medium-low heat. Cook 3–4 minutes per side, pressing down occasionally with a spatula or the bottom of a heavy pan, until bread is golden brown and cheese is melted. If using a sandwich press or panini maker, cook according to device instructions until golden and heated through (about 4–6 minutes).
If the exterior is browning before the interior cheese melts, lower the heat and cover the skillet with a lid for 1–2 minutes to trap heat and help the cheese soften.
Transfer cooked toasties to a cutting board and let rest 1 minute. Slice each sandwich on the diagonal.
Garnish with thinly sliced pickles or extra pimentos if desired, and serve immediately while hot.
