Garlic-Herb Brown Butter

Crab Claws & Cooking Liquid

Pat crab claws dry with paper towels. If any claws are frozen, thaw overnight in the refrigerator or under cold running water until pliable.

In a wide, heavy skillet or sauté pan (large enough to hold claws in a single layer), melt 6 tbs unsalted butter over medium heat until foaming.

Add the minced garlic and minced shallot to the butter and cook, stirring, until softened and aromatic, about 1–1½ minutes. Do not let garlic brown.

Pour in 150 ml dry white wine and bring to a gentle simmer. Scrape any browned bits from the pan. Simmer until the wine reduces by about half, approximately 3–4 minutes.

Stir in the lemon juice, 1.5 tsp sea salt, 1 tsp black pepper, and half of the chopped parsley and chives. Return the liquid to a gentle simmer.

Add the crab claws to the pan in a single layer. Spoon the hot butter-wine sauce over the claws, cover the pan, and poach over medium-low heat for 4–5 minutes until the meat is opaque and heated through (do not overcook).

Remove pan from heat. Transfer claws to a serving dish, reserving the cooking liquid in the pan for finishing.

Garlic-Herb Brown Butter

In a small saucepan over medium heat, melt 8 tbs unsalted butter. Continue cooking, swirling occasionally, until the butter foams, the milk solids turn golden brown and give a nutty aroma (brown butter), about 4–6 minutes. Watch closely to avoid burning.

Remove from heat and immediately add the smashed garlic cloves and thyme sprigs to infuse for 2 minutes. Discard the thyme sprigs and garlic or finely mince the garlic back into the butter if you prefer the texture.

Stir in 1 tsp lemon zest and 1/2 tsp fine sea salt. Add the remaining chopped parsley and chives. Keep warm. This is the garlic-herb brown butter for finishing the claws.

If you prefer a smoother sauce, strain the brown butter through a fine-mesh sieve into a small bowl, pressing to extract the flavored butter; otherwise reserve as-is.

Brown Butter Crumble

In a small skillet over medium heat melt 4 tbs unsalted butter until it begins to foam and the milk solids take on golden brown flecks, 3–4 minutes.

Add the panko breadcrumbs and chopped toasted nuts (if using). Stir constantly until the panko is crisp and lightly browned, about 2–3 minutes.

Remove from heat and stir in 2 tbs grated Parmigiano-Reggiano, 1/2 tsp lemon zest, 1/4 tsp smoked paprika, and 1/4 tsp fine sea salt. Taste and adjust seasoning. Keep warm or transfer to a bowl to cool slightly; crumble should be crisp when sprinkled.

Sourdough Toasts & Finish

Slice the sourdough loaf into 12–16 slices about 1/2" thick. Brush each slice lightly with olive oil and (optional) a little butter.

Toast the slices under a broiler or on a hot cast-iron skillet until golden and crisp, about 1–2 minutes per side under the broiler or 2–3 minutes per side in a skillet.

Return the reserved cooking liquid from the crab pan to low heat. Stir in 2–3 tbs of the garlic-herb brown butter to enrich and emulsify the sauce. Taste and adjust with salt and lemon juice if needed.

Arrange crab claws on the serving platter or individual plates with toasted sourdough alongside. Spoon a little of the enriched butter-wine sauce over each claw.

Finish each claw with a drizzle of the garlic-herb brown butter, then sprinkle the brown butter crumble evenly over the claws to give crunch and depth.

Garnish with remaining parsley, microgreens or extra chives and serve with lemon wedges for squeezing. Provide extra toasted sourdough for dipping into the sauce.
