Method
Citrus & Muddle
In a mixing glass or sturdy shaker, add the lemon quarters and cucumber chunks. Add the honey (0.5 tbs). Using a muddler, gently press and twist to release the lemon juice and cucumber juices—about 8–10 firm but controlled muddles. Avoid pulverizing the cucumber into fibrous mash; you want juice and aromatic oils, not puree.
Cocktail Base
Add the bourbon (2 oz) and Irish Mist honey liqueur (0.75 oz) to the muddled mixture. Add the simple syrup (0.25 oz) and one dash of Angostura bitters. Stir gently in the mixing glass to begin integrating the honey-infused muddle with the spirits.
Finish & Garnish
Double-strain the cocktail into a chilled rocks glass over one large ice cube or several large cubes to keep dilution slow. Double-straining (using a Hawthorne or julep strainer and a fine mesh strainer) keeps bits of pulp and seeds out of the final drink.
Serve immediately. Encourage the drinker to give the cucumber ribbon a gentle stir to release more aroma as they sip.
