Prepare glass

Chill an old-fashioned or coupe glass by filling it with ice water. Let sit while you mix the cocktail.

Dry shake (emulsify egg)

Add the Buffalo Trace bourbon, fresh lemon juice, simple syrup, egg white, and a pinch of kosher salt to a cocktail shaker (no ice). Dry shake vigorously for 15–20 seconds to emulsify and create foam.

Wet shake (chill & dilute)

Add 6 cubes of ice to the shaker, then secure the lid and shake hard for another 10–15 seconds until the shaker is frosty and well chilled, creating a silky texture.

Prepare serving glass

Discard the ice water from the chilled serving glass and optionally add 4 fresh ice cubes if you prefer the drink slightly cooler/less aromatic (omit ice for a classic neat presentation).

Strain & finish

Double-strain the cocktail into the prepared glass using a Hawthorne strainer and a fine-mesh (or julep) strainer to remove ice shards and ensure a smooth foam on top.

Garnish

Dash 2 drops (two dashes) of Angostura bitters onto the foam. Using a toothpick, gently swirl the drops into a simple pattern if desired. Express a lemon twist over the surface to release oils, then run it around the rim and drop it into the drink.

Serve

Serve immediately. Note that the kosher salt pinch enhances the bourbon's flavors and helps stabilize the foam; advise guests with egg allergies to avoid or substitute with 0.75 oz aquafaba (chickpea brine) instead of egg white.
