Juice and prepare

Roll the blood orange and a lemon on the countertop to loosen juices. Cut and squeeze enough blood orange to yield 1.5 oz (about 1 medium blood orange) and a lemon to yield 0.5 oz. Strain the juices through a fine mesh strainer to remove pulp and seeds into a jigger or small container.

Combine and chill

Add 2 oz SKYY Citrus, 0.75 oz Aperol, 1.5 oz strained blood orange juice, 0.5 oz strained lemon juice and 0.25 oz simple syrup into a cocktail shaker. Fill the shaker with ice (about 6 ice cubes).

Shake

Shake vigorously for 10–15 seconds until the shaker is very cold and slightly frosted. This chills, dilutes, and integrates the bright citrus and bitter Aperol.

Finish

Strain and top

Double strain the cocktail into a chilled coupe or a chilled large Nick & Nora glass (or a rocks glass over fresh ice if preferred) using a Hawthorne and a fine mesh strainer. Gently top with 2 oz Wycliff sparkling wine poured slowly down the side to preserve effervescence.

Garnish

Thread a thin lemon twist onto the rim or place it across the glass, and float a blood orange wheel on the surface or clip it to the rim. Serve immediately while the sparkling wine is lively.
