Prepare and cook meats
Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tablespoon olive oil. When shimmering, add the Newman Farm sausages and cook 8–10 minutes, turning every 2–3 minutes until evenly browned and cooked through (internal temperature 160°F/71°C). Remove sausages to a warm plate and tent with foil.
Cook rasher bacon
Return skillet to medium-high heat. Add the rasher bacon pieces in a single layer; cook 2–3 minutes per side until browned and edges crisp. Transfer to the plate with sausages and keep warm.

Roast tomatoes
While meats cook, preheat the broiler or set an oven rack 6 inches from the element and preheat to 450°F (230°C). Place tomato halves cut-side up on a small baking sheet, brush lightly with 1 teaspoon melted butter or olive oil, season with a pinch of salt and pepper. Broil or roast 6–8 minutes until softened and slightly charred at the edges. Keep warm.
Sauté mushrooms
In a separate medium skillet, heat 1 tablespoon butter over medium-high heat. Add mushrooms spread in a single layer; salt lightly. Cook without moving 2 minutes, then stir and cook another 2–3 minutes until golden and juices evaporate. Season with a pinch of black pepper and transfer to warm serving plate.
Crisp home fries
If potatoes are raw: parboil diced potatoes 6–8 minutes until just tender, drain and cool slightly. In the skillet used for sausages (wipe out excess fat if too much remains, leaving about 1 tablespoon), add 1 tablespoon butter and heat over medium-high. Add parboiled or leftover diced potatoes in a single layer, pressing down slightly. Let sit undisturbed 3–4 minutes to brown, then stir and continue to cook 6–8 minutes until crispy and golden. Season with salt and pepper to taste. Transfer to plate and keep warm.
Eggs & Toast
Toast the bread
While home fries finish, toast the bread slices in a toaster or under the broiler until golden (about 1–2 minutes per side under broiler). Spread with 1 tablespoon butter and keep warm.
Cook eggs (fried sunny-side or over-easy)
Wipe a small nonstick skillet clean and heat over medium. Add 1 teaspoon butter. Crack two eggs into the skillet, spacing them apart. For sunny-side up: cook 2–3 minutes until whites are set but yolks are runny. For over-easy: cook whites until set (about 2 minutes), gently flip and cook 20–30 seconds more. Season eggs with a pinch of salt and pepper. Remove from pan.
Plating & Finishing
Arrange the warm components on a large plate in the style of a Full Irish: place sausages and rashers to one side, black and white puddings near them, home fries in a pile, mushrooms and roasted tomatoes grouped together, and toast to the side. Top eggs onto the plate last. Garnish with an extra grind of black pepper. Serve immediately.
