Chill glass

Place a rocks glass or coupe in the freezer or fill it with ice water to chill while you build the cocktail.

Combine ingredients

In a mixing glass add 4 large ice cubes, 2 oz 1792 12-Year bourbon, 1 oz sweet vermouth, 0.5 oz Averna (or substitute amaro), 2 dashes Angostura bitters, 1 dash orange bitters, and 0.25 tsp simple syrup only if you prefer a slightly sweeter, softer finish.

Stir

Stir the mixture with a bar spoon for 30–45 seconds (about 20–30 full turns) until well chilled and slightly diluting — the mixing glass should develop light frost on the outside and the liquid should be very cold.

Prepare glass

Discard ice water from the chilled glass if used. If serving over a single large ice cube, add one large clean ice cube to the glass.

Strain

Double-strain or fine-strain the cocktail from the mixing glass into the chilled rocks glass (over the single large ice cube if using) or into the coupe without ice.

Garnish and finish

Express the orange peel over the drink by holding it skin-side down about 2–3 inches above the glass and giving it a firm twist to release the oils. Run the rim of the glass with the peel and drop the twist into the drink as a garnish.

Serve

Serve immediately. Sip slowly to appreciate the 1792 12-Year's oak and spice notes balanced by sweet vermouth and the gentle bitter herbal lift of Averna.
