Prepare Vegetables
Wash and slice
Rinse cucumbers under cold water. Trim the ends and slice into 1/4-inch rounds. Place slices in a large bowl. Thinly slice the red onion into half-moons. Thinly slice jalapeños and fresno chiles; include seeds for more heat. Smash the garlic cloves with the flat side of a knife and peel. Thinly slice the ginger if using.
Make the Brine
Combine the water, white distilled vinegar, granulated sugar, and kosher salt in a small saucepan. Add the pickling spice. Bring the mixture to a gentle simmer over medium heat, stirring until the sugar and salt dissolve completely, about 3–5 minutes. Do not boil vigorously; just enough to extract spices and dissolve solids. Remove from heat and let cool for 3 minutes.
Taste carefully (use caution; hot). If you prefer brighter acidity, add up to 2 tablespoons more vinegar. For sweeter pickles, add 1 teaspoon more sugar. Adjust to taste while warm so it dissolves.
Pack Jars
Use clean 1‑pint (or similar) wide-mouth jars. Into each jar, layer dill sprigs, a smashed garlic clove, a few slices of ginger (if using), several slices of jalapeño and fresno chiles, a handful of red onion, and then a tight-packed layer of cucumber slices standing on edge or stacked flat. Leave about 1/2 inch headspace at the top of each jar.
Pour the hot brine over the packed vegetables, making sure the cucumbers and aromatics are fully submerged. Use a small spatula or chopstick to release trapped air bubbles and adjust headspace to 1/2 inch. Wipe rims clean and seal with lids.
Cool & Chill (Quick Refrigerator Pickles)
Allow jars to cool on the counter for 30–60 minutes, then refrigerate. For best flavor, let pickles sit at least 24 hours before eating; heat and spice intensify after 48 hours. Refrigerated pickles will keep well for up to 4 weeks.
If you prefer a firmer, crisper texture, leave jars in the refrigerator for at least 48 hours and consume within 3–4 weeks. Do not attempt water-bath canning with this quick-brine recipe unless you follow tested canning procedures and adjust acid levels.

If you want shelf-stable jars, follow a tested, USDA-approved canning recipe: use appropriate acid levels, process in a boiling water bath for the correct time for your jar size and altitude.
