Prepare the Ingredients
Slice the chorizo into 1/2 inch thick rounds. Mince the garlic cloves and finely chop the onion. Set aside.
Cooking
Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 5 minutes.
Cook the Chorizo
Add the sliced chorizo to the skillet and cook for about 5 minutes, allowing it to brown slightly.
Add Wine and Spices
Pour in the red wine, then add the bay leaves, smoked paprika, black pepper, and salt. Stir well to combine.
Simmer
Bring the mixture to a gentle simmer. Cover and let it cook for about 20 minutes, allowing the flavors to meld and the sauce to thicken slightly.
Garnish and Serve
Remove the bay leaves and stir in the chopped fresh parsley. Serve warm, with crusty bread or over rice.
