Method
French Fries
Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips.
Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Fry the potato strips in batches until golden brown, about 5-7 minutes.
Drain and Season
Remove fries from the oil and drain on paper towels. Sprinkle with salt to taste.
Cajun Fries
Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips.
Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).
Fry the Potatoes
Fry the potato strips in batches until golden brown, about 5-7 minutes.
Season with Cajun Spice
Remove fries from the oil, season with Cajun seasoning and salt, and drain on paper towels.
Truffle Parmesan Fries
Prepare the Potatoes
Wash and peel the Russet potatoes. Cut them into thin strips.

Prepare the Sweet Potatoes

In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).
Fry the Sweet Potatoes
Fry the sweet potato strips in batches until golden brown, about 5-7 minutes.
Drain and Season
Remove fries from the oil and drain on paper towels. Sprinkle with salt to taste.
Onion Rings
Prepare the Onions
Slice the large onions into 1/4 inch thick rings.
Make the Batter
In a bowl, mix together the flour, cornstarch, baking powder, and salt. Gradually add beer or sparkling water until smooth.
Heat the Oil
In a deep fryer or large pot, heat the vegetable oil to 350°F (175°C).
Fry the Onion Rings
Dip each onion ring into the batter, then fry in batches until golden brown, about 3-4 minutes.
Drain and Serve
Remove onion rings from the oil and drain on paper towels. Serve warm.
Cilantro Lime Rice
Cook the Rice
In a pot, combine the long-grain white rice and water. Bring to a boil, then reduce heat, cover, and simmer for 15-20 minutes until rice is tender.
Fluff the Rice
Remove from heat and let it rest for 5 minutes. Fluff the rice with a fork.
Add Cilantro and Lime
Stir in chopped cilantro, lime juice, and salt. Mix well and serve.

Prepare the Vegetables
Wash and chop mixed seasonal vegetables into bite-sized pieces.
Heat the Oil
In a large skillet, heat olive oil over medium heat.
Sauté the Vegetables
Add the chopped vegetables to the skillet, season with salt and black pepper, and sauté for 5-7 minutes until tender.
Serve
Serve hot as a side dish.
