Method

Build the cocktail

Chill glass

Place a highball or large Collins glass in the freezer for a few minutes or fill it with ice water while you gather ingredients to ensure the drink stays cold.

Add rum

Remove the glass from the freezer or discard the ice water and fill the glass with fresh ice. Pour 2 oz Captain Morgan Spiced Rum over the ice.

Add root beer

Slowly top the rum with 6 oz chilled root beer. Pour gently down the side or over the back of a spoon to minimize foaming and preserve carbonation.

Float Baileys

Carefully float 1 oz Baileys Irish Cream on top by pouring it slowly over the back of a spoon held just above the surface of the drink. The Baileys will create a creamy layer or swirl with the root beer.

Optional ice cream float variation

For a richer, dessert-style Captain's Float, remove the ice if desired and add 1 scoop of vanilla ice cream to the glass after pouring the root beer. Then gently drizzle the Baileys over the ice cream so it melts into the float.

Garnish and serve

Garnish with a maraschino cherry on top and, if you like, a light dusting (about 1 tsp) of grated nutmeg or cinnamon. Serve immediately with a long spoon and a straw.
