Sparkling Ginger-Lime Base
Fill the chilled glass with one large ice cube (or several regular cubes) to keep the drink cold without diluting quickly.
Pour 8 oz ginger beer into a measuring cup and add 2 oz sparkling water to lighten and give more effervescence. Stir gently once to combine.
Stir in 1/2 oz fresh lime juice and, if using, 1/4 teaspoon lime zest to brighten the aroma. Gently fold to keep carbonation.
Aromatic & Sweetening Elements
Add 1/2 tablespoon simple syrup (or agave) to the glass and stir gently until incorporated. Taste and adjust sweetness if desired: add up to another 1/4 tablespoon for a slightly sweeter profile.
Add 2 dashes of non-alcoholic bitters or Angostura bitters (regular Angostura is alcoholic but used sparingly in many non-alcoholic cocktails); place the dashes on top and gently stir once to distribute aromatic notes without flattening fizz.
Garnish
Finish by garnishing with a lime wheel or wedge on the rim.
If using, thread a thin slice of candied or fresh ginger on a pick and rest it across the glass, and add a mint sprig for a fresh top note. Gently slap the mint between your palms before adding to release aroma.

Serve immediately while effervescent. Provide a stirrer so the guest can re-mix as the ice melts. Recommend sipping slowly to enjoy the layered ginger, lime, and aromatic bitters notes.
