Prepare glass

Chill a coupe or Nick & Nora glass by filling with ice water while you prepare the cocktail, or place it in the freezer for 5–10 minutes.

Dry shake (if using egg white)

If using egg white for a silky texture, add the gin, elderflower liqueur, lemon juice, simple syrup, egg white and Angostura bitters to a cocktail shaker. Seal and shake vigorously without ice for 15–20 seconds to emulsify and build foam.

Wet shake

Add ice to the shaker (about 4–6 large cubes or ~1 cup). If you did a dry shake, simply add ice to the same shaker. Shake vigorously for 12–15 seconds until the shaker is very cold to the touch and the drink is well chilled and slightly diluted.

Strain

Discard the ice water from the chilled glass. Double-strain the cocktail into the chilled coupe or Nick & Nora using a Hawthorne strainer and a fine-mesh strainer (this removes small ice shards and gives a smooth texture).

Garnish and finish

Express a lemon twist over the surface to release oils, run it around the rim and drop it into the glass. Add an edible flower or a small basil leaf on the foam (if present) for an elegant finishing touch.

Serve

Serve immediately while cold. Advise guests to sip and enjoy the floral- citrus balance.
