Muddle herbs and citrus
In a cocktail shaker or sturdy mixing glass, add fresh mint leaves and the optional basil leaf. Pour in the fresh lime juice, fresh lemon juice, and simple syrup. Gently muddle just 6–8 times to release oils and aroma—avoid pulverizing the herbs to prevent bitterness.
Add a small handful of ice to the shaker to chill the mixture briefly, then give it one quick shake by hand (no need to fully dilute) or stir for 5–7 seconds to combine and cool.
Assemble
Combine with beer and sparkling water
Fill a highball or pint glass with cubed ice (about 1 cup). Strain the muddled citrus-herb mixture over the ice, using a fine strainer if you want to catch small herb bits. Pour 12 oz of chilled Lagunitas IPA slowly into the glass at a slight angle to preserve carbonation. Follow with 3 oz cold sparkling water to lighten the body and add extra fizz.
Gently stir once or twice with a bar spoon or long spoon to integrate, taking care not to over-stir which will flatten the beer.
Finish & Garnish
Garnish with a lime wheel or wedge on the rim and a fresh mint sprig tucked into the top. Clap the mint between your palms once before adding to release extra aroma if desired.
Serve immediately while cold and effervescent.
