Combine

Add 2 oz London dry gin and 0.5 oz dry vermouth to a mixing glass. Add 2 dashes of orange bitters.

Chill by stirring

Fill the mixing glass with ice (enough to reach just above the liquid). Using a bar spoon, stir gently but steadily for 20–30 seconds until the outside of the glass feels cold and the liquid is properly diluted (approximately 15–20% dilution by volume).

Prepare serving glass

If serving up (in a coupe or Nick & Nora), chill the serving glass by filling it with ice water while stirring the drink. If serving on the rocks, place one large clear ice cube in the rocks glass now.

Strain

Discard the ice water from the serving glass if used. Using a julep or Hawthorne strainer, double-strain the stirred cocktail into the chilled serving glass (or over the large ice cube if serving on the rocks).

Express lemon oil

Use a peeler or sharp knife to cut a 1-inch wide strip of lemon peel, avoiding too much pith. Hold the peel over the drink and gently pinch to express the oils across the surface of the cocktail, then rub the peel's edge along the glass rim.

Place garnish

Drop the expressed lemon twist into the drink or rest it on the rim, depending on presentation preference. Serve immediately.
