Prepare spice-milk base
In a medium saucepan over medium heat, combine whole milk, heavy cream, pumpkin purée, brown sugar, maple syrup, vanilla extract, ground cinnamon, ground ginger, ground nutmeg, and kosher salt. Whisk continuously until mixture is smooth and sugar dissolves, about 3–4 minutes. Do not boil; small bubbles around the edge indicate ready temperature (steaming, about 170–175°F / 77–80°C).
Bloom coffee
If using instant espresso powder: in a small bowl, dissolve the espresso powder in 2 tablespoons of very hot water, whisk until dissolved. If using brewed espresso: have 2 shots (about 2 tablespoons each) ready and hot.
Finish and emulsify
Reduce heat to low. Stir the dissolved espresso (or brewed shots) and unsalted butter into the saucepan. Whisk for 30–45 seconds until butter melts and the drink is slightly frothy and fully combined. Taste and adjust sweetness with additional maple syrup or brown sugar if desired.
Serve
Divide the hot drink among four mugs (about 1 cup each). Top each with a generous dollop of whipped cream, a sprinkle of ground cinnamon, and about 1/2 tablespoon crushed toasted pecans per mug. Serve immediately.
