Cook beef

Heat 1 tablespoon vegetable oil in a skillet over medium-high heat. Add 1 lb ground beef and cook, breaking up with a spatula, until browned, about 6–8 minutes. Drain excess fat if needed. Stir in 2 tablespoons taco seasoning and 1/4 cup water, simmer 2 minutes until evenly coated and slightly thickened. Season with 1/2 tsp salt and 1/4 tsp black pepper. Remove from heat.

Arrange chips and toppings

Preheat oven to 375°F (190°C). On a large rimmed baking sheet or oven-safe platter, spread 12 cups tortilla chips in an even layer. Sprinkle half of the shredded cheddar (1.5 cups) and half of the monterey jack (1 cup) over the chips. Scatter the cooked seasoned beef evenly over the chips, then add 1 cup black beans, 1 cup diced tomatoes, and 1 cup pickled jalapeños.

Bake

Top with remaining cheeses and place in the preheated oven. Bake 8–10 minutes until cheese is melted and bubbly. If you prefer extra crisp, broil 1–2 minutes while watching carefully.

Finish and serve

Remove nachos from oven. Dollop or spoon 1 cup guacamole and 1 cup sour cream in a few spots across the nachos. Sprinkle 1 cup sliced green onions and 1/4 cup chopped cilantro and 1 cup pickled red onions over the top. Serve immediately with lime wedges (6) on the side for squeezing.

Prepare chicken filling

In a medium bowl combine 1 cup cooked shredded chicken with 1/4 cup buffalo wing sauce and 2 tablespoons of the ranch dressing. Toss until chicken is evenly coated. Taste and adjust heat or sauce quantity if desired.

Toast buns

Preheat a skillet or griddle over medium heat. Brush tops of 4 slider buns with 1 tablespoon melted butter. Toast buns, buttered-side down, 1–2 minutes until golden.

Assemble sliders

Spread remaining ranch dressing (about 2 tablespoons) on the bottom halves of the buns. Divide the buffalo chicken mixture evenly among the 4 buns. Top each with shredded iceberg lettuce and two slices of dill pickle. Close with toasted bun tops and serve immediately.

Prepare potatoes

Preheat oven to 425°F (220°C). Toss 4 cups cut russet potatoes with 2 tablespoons olive oil, 1 tsp smoked paprika, 1/2 tsp garlic powder, and 1 tsp kosher salt until evenly coated.

Bake fries

Spread potatoes in a single layer on a parchment-lined baking sheet. Bake 20–25 minutes, flipping once halfway, until golden and crisp. For extra crisp, finish under the broiler 1–2 minutes while watching closely.

Serve with sauces

Transfer fries to a serving basket or plate and season with additional salt if needed. Serve with 1/2 cup house fry sauce (ketchup + mayo blend) and 1/4 cup chipotle aioli for dipping.

Assemble salad

In a large bowl combine 6 cups chopped romaine lettuce and 1 cup croutons. Add 1/2 cup grated parmesan cheese and 1/2 cup caesar dressing. Toss gently until lettuce is evenly coated.
