Poach the chicken
Place the chicken breasts in a medium saucepan and season with kosher salt, black pepper, garlic powder, and smoked paprika. Add enough water or low-sodium chicken broth to cover the chicken (~2 cups). Bring to a gentle simmer over medium heat, then reduce heat to low, cover, and poach until the chicken is cooked through (internal temperature 165°F / 74°C), about 12–15 minutes depending on thickness. Remove chicken and let rest 5 minutes.
Shred the chicken
Using two forks or your hands, shred the poached chicken into bite-sized pieces. Place shredded chicken in a medium bowl and set aside.
Make the buffalo sauce
In a small saucepan over low heat, melt the unsalted butter. Stir in the hot sauce, brown sugar, and apple cider vinegar until combined and warm. Taste and adjust heat or sweetness as desired. Remove from heat.
Toss chicken with sauce
Pour most of the warm buffalo sauce over the shredded chicken (reserve about 2–3 tablespoons for brushing the buns). Toss thoroughly so chicken is evenly coated. If you prefer saucier sliders, add remaining sauce to taste.
Assemble sliders
Spread about 1 teaspoon of blue cheese dressing on the bottom half of each toasted roll. Divide the buffalo chicken evenly among the 12 rolls (about 2 tablespoons per slider). Top each with a small pile of shredded iceberg lettuce (about 1 teaspoon), a dill pickle slice, a drizzle of reserved buffalo sauce if desired, and a sprinkle of sliced green onions. Close with the top bun.
Optional sides & garnish
Place celery and carrot sticks in a small bowl or alongside the platter. Offer extra blue cheese dressing in a ramekin for dipping.
